This tasty Serbian bean soup is prepared with unripe spelt berries/freekeh instead of grounded beef. This makes the soup completely vegan (plantbased). The remaining ingredients give the extra something. English/ German Recipe.
At the sports festival in my home village where I grew up they made always this soup. It was cooked over an open fire. My parents told me that I had already eaten this at a age of one year. Although this is pretty well seasoned. Shortly I veganized this recipe and would not like to keep you from this delicious spiced soup.
Unripe spelt berries/freekeh (wheat) as meat substitute
The original recipe is prepared with grounded beef. I like to use cracked unripe spelt berries/freekeh to replace grounded beef in soups etc. For this I take whole unripe spelt berries/freekeh and mix it briefly in the stand blender. Here you can see for yourself how rough or fine you want the whole thing. Unripe spelt flour tastes slightly nutty and gives the soup a delicious touch.

What is unripe spelt berries/freekeh?
In Germany, you get in almost every grocery store the unripe spelt berries. We are making some patties and other delicious dishes. This unripe spelt berry (Grünkern/ green kernel) is roasted and smoked with beech wood. This is how it gets its delicious taste from.
In the States, I would use Freekeh. This is to most similar you get there. It is from unripe durum wheat berries and also roasted. In 4 months I have to use this alternative.

A quick soup
The Serbian bean soup is made pretty quick. I usually start the evening before and let the unripe spelt/ freekeh soak in vegetable broth overnight. When you are cooking the soup it is ready faster.
- First, grind the freekeh and soak in sufficient vegetable broth. It is best to soak overnight.
- The next day, fry the diced onion is in a pot until they are glassy. To this I add some water into the pot.
- Cut the soup vegetables into small pieces and add to the onions. Fry for a few minutes.
- Now you can add all other ingredients and simmer for about 20 minutes.
- Season the soup according to your own taste.
- Enjoy it!
