Ingredients
Did I make you curious what you will need for this vegetable stock powder? You will not need veggie scraps, I use these to make veggie broth. For this, you are going to need real veggies.

- Carrots
- Onions
- Celery or Celeriac
- Garlic
- Leeks
- Mushrooms
- Parsley
- dried tomatoes
- Nutmeg
- Lovage (optional)
- Himalayan Salt
- Nutritional Yeast (optional)
Instructions
It is pretty easy. You take a food processor and chop everything super fine that you get almost a paste. This way it will take less time to dry. In the preheated oven at 176 Fahrenheit, you will dry the vegetable paste for a couple of hours until it is super dry. This way you get a flavorful broth when you will dissolve it in water.
Add the dried vegetables to the blender along with the nutritional yeast and dried herbs. Blend until you get a fine powder.

Soup Mix Solution: 1 cup hot water with 1 teaspoon homemade vegetable bouillon powder.
Hint: You notice the veggies are dry when you rub it between your fingers and the veggies are crumbling into powder. If you use dried herbs, then you can add these to the dried vegetables.
You can also leave the veggies outside in summer. Just cover it that no bugs fly on it. It will dry there even faster.

Dehydrate
You can always use a dehydrator to make this veggie broth powder. It will take around 12 hours to dehydrate the veggies.
Just make sure the veggies crumble in your hand before you start blending them into a powder. Always check the instructions of your dehydrator.
Substitutions
I love about homemade seasonings that you can always substitute some ingredients to make it more like your taste.
- Carrots: Instead of Carrots, you can always add some parsnips or other root vegetables.
- Onions: I love to use yellow onions, but you can always add other onions. If you do not have onions, you could also substitute with onion powder. But it will not have as much flavor as with fresh onions.
- Celery: Usually I prefer Celeriac in my homemade vegetable stock powder, but where we live right now I cannot find it here. So I substitute it with Celery.
- Garlic: You do not have fresh garlic, No problem garlic powder is a perfect substitute.
- Lovage: Lovage is a popular German Herb I have some fresh lovage in my garden, but you can also buy it dried. This adds a nice extra flavor to your homemade broth.
- Himalayan Salt: The salt makes it last longer. You can adjust the amount you want to add to your vegan stock powder. For a low salt diet, I recommend adding some lemon zest to the ingredients to keep the sodium content low.
Variations
What about adding different flavors to your homemade bouillon powder. This way it never gets boring. Just use the common ingredients and some more.
- Spicy: Add some chili to have a little kick in your broth recipe.
- Beef Flavor: Add some beef flavor like thyme, rosemary to your own vegetable broth powder.
- Chicken Flavor: I have already a quick vegan chicken bouillon powder recipe, but you can also add some poultry seasoning to it.
Equipment
Like I mentioned in the instructions part, you will need a food processor or high speed blender. I prefer a food processor for chopping the raw veggies and the high speed blender for making the powder.
You will need an oven when you do not have a dehydrator.
Storage
Your vegan veggie broth powder will last in an airtight container like a dry jar for a couple of months at room temperature in a dry place. I store it in my pantry and I have always some own homemade vegetable powder with fresh vegetables on hand.
Top Tip
I pretty much use this vegetable broth powder as a tasty seasoning and create depth of flavor on everything. No matter if I make salad dressing, roasted vegetables. I always make sure I have some on hand. And it is easily prepared while I cook, I just process the vegetables and put them in the oven. Makes it so easy because I am in the kitchen anyway. Just make sure you will not need to use the oven because it will be in use for a few hours.
