Vegan Mac and Cheese with CoconutBacon (dairy free)

Make your Mac and Cheese meals healthier with this vegan comfort food twist. This easy stovetop cheese sauce is gluten-free, opt. nut-free, and drool worthy! Spice up the classic kids' favorite by using a cashew base, or substitute with sesame seed or pumpkin seeds to make it Nut allergy friendly.

Ingredients

  • 1 lbs 500 g pasta

Sauce:

  • 2 handful raw cashews
  • 3 tablespoons of yeast flakes
  • ½ teaspoon garlic powder onion powder
  • ¾ teaspoon salt
  • 2 tablespoon tapioca starch
  • 1 teaspoon of psyllium husk powder
  • 1.25 cups 300 ml of water
  • 1 portion of coconut bacon

Instructions

  • Put all the ingredients for the sauce in a high-speed blender and blend until a creamy consistency is obtained. And season with the above spices again.
  • In the meantime, prepare the coconut bacon and cook the pasta.
  • Heat the sauce in a saucepan on medium heat. Until you get this cheese-like consistency.
  • Mix the pasta with the sauce and arrange on plates. Sprinkle coconut bacon over it.
