Rice pudding is one of the classic comfort foods and is easy to prepare vegan. With this easy variant, you can make a quick lunch, snack. Prepare the vegan rice pudding with plant milk and hot cherries and eat at any time of the year. A fast well-being food which you have whipped up in minutes.
1cup175 g rice pudding rice (Arborio or Carnaroli)
½teaspoonsvanilla extract or ¼ vanilla bean mark
2-3tablespoonssweetener of your choice
Lemon Zest of a quarter lemon
Warm cherries
24.6oz700 g pitted cherries (frozen or fresh)
1.25cups300 ml of cherry juice
3-4tablespoons30 g cornstarch
2teaspoonsof sweetener -optional-
Instructions
For the rice pudding, place all the ingredients in a saucepan and stir in and boil for 25 minutes over medium heat. Try if the rice is soft enough, otherwise cook a bit longer.
For the cherries in an extra pot, mix the juice with the starch and bring to a boil while stirring constantly. Pour in the cherries. Wait for frozen cherries until they have thawed. Sweeten with sweetener as needed.
Now serve in a bowl or in a glass as in the pictures.
