Vegan Mint Chocolate Cake with Hazelnuts

Ingredients

For the Cake!

  • 2 cups 240g whole white wheat flour
  • 2 cups 200 g hazelnut flour
  • 3 teaspoons baking powder
  • 0.75 cup 75g cacao powder
  • 1 tablespoon potato starch
  • 1 teaspoon peppermint extract
  • 1.25 cups 200 g of sweetener (coconut sugar, for example)
  • 4 tablespoons nut butter almond butter
  • ~2.75 cups ~650 ml sparkling water
  • 1 teaspoon apple cider vinegar

For the glaze!

  • Dark Chocolate

Instructions

  • Preheat oven to 350°F (175°) If you have a convection oven, use convection setting.
  • Mix Wet Ingredients until creamy. (except of 1 cup sparkling water)
  • Add dry ingredients and stir until well combined without flour clumps.
  • Add more sparkling water if necessary and apple cider vinegar. Whisk until you got a well combined dough.
  • Pour it in the bundt cake pan and bake for around 40 mins.
  • Let it cool on a wire rack.
  • When completely cooled remove the pan.
  • Melt some chocolate and brush the cake with it.
