Ingredients

Mousse

  • 1 can chickpea the water of it, best fridge cold
  • 1 cup 130 g chocolate (bittersweet)
  • 2.5 tablespoon 20 g of cocoa powder
  • 2 tablespoons of maple syrup
  • ½ teaspoon vanilla extract
  • 2 tablespoons of coconut milk

crumble mixture

  • ¼ cup + 1 tbsp 50 g spelt flour
  • ¼ cup+ 1 tbsp 50 g of almond flour
  • 2 tablespoon cashew butter
  • 2 tablespoon water
  • 2 tablespoons cocoa powder or until it is very dark.
  • 1 tablespoon coconut sugar or maple syrup

Gravestones:

  • ¼ cup + 1 tbsp 60 g of powdered sugar
  • ½ cup + 1 tbsp 80 g of flour
  • 1 tablespoon Aquafaba
  • 1 tablespoon starch
  • cup + 1 tablespoon + 1 tsp 100 ml of milk
  • 2 tablespoons cocoa / half only

Instructions

  • First, make the crumbs and gravestones. So these can cool down. To do this, prepare the crumble dough and the hip dough. If you want to write something on the gravestones, or just draw a cross, divide the hip dough and you leave some without cocoa powder as coloring.  To do this I take away 5 tablespoon of the dough (that should be enough). Chill the doughs for 30 min in the fridge. The hip dough is getting a little firmer.
  • Spread the crumble dough on a baking sheet lined with baking paper. You fill the dark hip dough into a piping bag and now you can pipe gravestone shapes on a baking sheet. Decorate the stones with the bright hip dough.
  • You bake these in a preheated oven, set at 180 C for about 4-5 minutes and the crumble for about 10-15 minutes until they are baked through. Just look, when the crumble and the Halloween gravestones have reached the desired color.
  • Melt the chocolate over a water bath. And let it cool down a bit add the coconut milk and vanilla extract, and cocoa powder. In the meantime, we can prepare the mousse, to beat the aquafaba with maple syrup until a consistency such as beaten egg whites is achieved. This can take about 10 minutes. When the chocolate is cool enough you can slowly add the chocolate to the Aquafaba and stir slowly. Make sure you can dip your finger in the melted chocolate easily.
  • Now you can serve the dessert in glasses and decorate. I make the decorations shortly before serving. So cover the mousse au chocolate with crumbs and put the gravestones on it. And your halloween dessert is ready.
