Tofu Sweet and Sour

If you don't usually like tofu, give this sweet and sour sticky tofu a go - it's an easy recipe that could totally change your mind about the humble food!

Ingredients

  • 1 block tofu firm
  • 2 tablespoons cornstarch
  • 4 tablespoon Aquafaba
  • cup 45 g flour
  • ½ teaspoon baking powder
  • 2 bell peppers
  • 1 cup of pineapple chunks 200g , I like to take fresh pineapple

Sweet sour sauce

  • 6 tablespoons vinegar
  • 6 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons tomato paste
  • 2 tablespoons soy sauce
  • 2 tablespoon pineapple juice or date paste
  • 2 teaspoons water
  • 1 teaspoon roasted sesame seeds
  • 2 tablespoons cornstarch

Instructions

  • Press the tofu. Then dice it in about 1 cm thick
  • Put the cornstarch in a bowl with a lid. Add the tofu and shake with the lid closed. So that all parts of the Tofu are covered with cornflour, but should not be thick just thin covered
  • Now mix the flour (I take whole wheat flour) with the baking powder neatly
  • First dip the tofu into the aquafaba and then into the flour mixture. And spread on a baking sheet lined with baking paper. Now bake for approx. 10 min at 180 ° C (350°F), until the flour is nice and firm on the outside, could take a little longer
  • For the sauce mix all ingredients
  • Dice the peppers and sauté with the pineapple pieces in a pan and deglaze with the sauce. Now add the baked tofu, this will absorb the sauce nicely and become nicely sticky as in the photo.
  • We eat rice with it.
