Overnight Oats 3 Ways (vegan, refined sugar-free)

Overnight oats are one of the fastest breakfasts to make ahead. Especially in summer, when you don't want to stand in the kitchen for long and want to have a cold breakfast, these vegan overnight oats are perfect.
You can also simply prepare several glasses at once and keep them in the fridge. They last there for about 1 week.

Ingredients

Strawberry Overnight Oats

  • ½ cup 50g oatmeal, pithy
  • cup 80 ml almond milk or other vegan milk
  • 1 tablespoon nut butter e.g. almond butter
  • cup 80 g strawberry yogurt, unsweetened (or make your own strawberry yogurt with unsweetened yoghurt and strawberry puree)
  • 1 tablespoon chia seeds
  • cup 65 g strawberries, diced (fresh or frozen)

Brownie Overnight Oats

  • ½ cup 50g oatmeal, pithy
  • 2 teaspoon cocoa powder
  • 2 teaspoon chia seeds
  • ½ cup 120 g yogurt, unsweetened (vegan)
  • 2 tablespoon chopped dates dried
  • 1 tablespoon nut butter e.g. almond butter
  • ½ cup 120 ml almond milk or other vegan milk
  • 3 teaspoon chocolate chips opt

Cinnamon Rolls Overnight Oats

  • ½ cup 50 g oatmeal, pithy
  • 1 tablespoon chia seeds
  • 1 tablespoon chopped dates dried
  • 1.5 tablespoon raisins
  • ¼ teaspoon cinnamon
  • ¼ teaspoon vanilla extract
  • cup 160 ml almond milk or other vegan milk
  • cup 80 g yogurt, natural (unsweetened)

Instructions

  • Start putting the dry ingredients in a jar and add the liquid ingredients. Put the oats in the fridge overnight, sealed.
  • Stir it the next day and enjoy it. If they are too dry or too firm for you, you can use a little more almond milk.
