Homemade Vegan Flatbreads

Vegan flatbread - a fool-proof recipe, not just for beginners. With these super fluffy whole spelt (wheat) flatbreads (doner kebab) you get a healthier version of the traditional Turkish flatbread. With a light, airy crumb and a crispy crust, just as it should be, this delicious flatbread with yeast is perfect as a sandwich or kebab bread.

Ingredients

  • 3 cups + 2 tbsp 400g whole grain flour (spelt or wheat)
  • ½ cup 125 ml plant drink (soy, almond or rice)
  • ½ cup 125 ml water
  • 2 ¼ teaspoon 7 g active dry yeast
  • 1 teaspoon maple syrup
  • 2 tablespoon 25 g nut butter or tahini
  • 1 teaspoon sea salt

For Brushing:

  • 3 tablespoon Aquafaba
  • 1 pinch turmeric

Optional:

  • Sesame caraway Seeds

Instructions

  • Put the yeast, water and maple syrup in a bowl and let it stand for a few minutes.
  • Mixe the plant milk and the nut butter in a little bowl until creamy.
  • In the meantime, you can put all the other ingredients except the salt in a mixing bowl. Now, add the yeast mixture and use a food mixer’s dough hook to knead the mixture to a smooth dough. This takes about 5 minutes.
  • Now you can add the salt and knead again for a few minutes.
  • Let the yeast dough covered with a damp cloth at room temperature for about 2 hours to rise. Knead the dough again after about 1 hour.
  • Now you can put the dough in the fridge and let it rest overnight. If you do not have time, you can skip the step. However, it would help the dough to rise better later.
  • Divide the dough into 4 equal parts and heat the oven to 180°C (350°F).
  • Now roll out the flatbreads, which are a bit smaller than your hand, but about 2 cm thick and place them on a baking sheet lined with baking paper. Cover the bread and let it rise for about 30 min.
  • While they rise, mix Aquafaba and turmeric to brush on the flatbread.
  • If you wish, you can sprinkle the flatbread with sesame or caraway seeds.
  • Put the flatbread in the oven and bake for about 20 minutes or until the desired browning is achieved.
