Vegan cinnamon waffle cookies, my favorite Christmas cookies since childhood. The Christmas bakery starts soon and what can not be missing with the Advent biscuits?! Exactly cookies. They fit perfectly with the Advent season and taste best in the pre-Christmas period. Whether with a mulled wine like at the Christmas market or just with coffee or tea.
  • 250 grams refined coconut oil
  • 150 g of coconut sugar
  • Mix ½ tsp of psyllium fiber powder and ½ cup of water
  • 40 grams of cinnamon
  • 500 grams of spelt flour or AP Flour unbleached or glutenfree flour
  1. Mix all ingredients together. If you want more cinnamon in it, you can add some more. As you like most.
  2. Now put the dough in the fridge for an hour and form small balls and place into the cinnamon waffle iron like normal waffles. Put one ball in one shape.
  3. They hold for a couple of weeks in a cookie jar. But in our house they do not last so long.
