Dann habe ich f\u00fcr dich hier ein gelingsicheres Rezept um fluffige Br\u00f6tchen aus Vollkornteig zu kreieren.\u00a0<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Lasse dich bitte nicht von der langen Gehzeit irritieren. Wenn du dich schon mal an Vollkornteigen probiert hast, dann ist dir vielleicht auch aufgefallen, dass Vollkornhefeteige in der Regel nicht so hochgehen wie Teige aus Auszugsmehl. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Der Schl\u00fcssel f\u00fcr luftige Hefeteige aus Vollkorn ist, eine l\u00e4ngere Gehzeit. Die Hefe muss richtig aktiv sein, damit diese auch das schwerere Vollkornmehl aufgehen l\u00e4sst. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Und dies schaffen wir mit einem Vorteig, denn wir gehen lassen. Diesen kannst du \u00fcber Nacht gehen lassen oder einfach fr\u00fch am morgen schnell anr\u00fchren und bis abends abgedeckt stehen lassen.\u00a0<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Zu diesem Rezept ist noch zu erw\u00e4hnen, dass jedes Mehl anders aufgeht. Hier eine kleine \u00dcbersicht was du ben\u00f6tigst. Dazu nehmen wir die Vorteig Zutaten und vermengen diese. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Nun nehme ein nasses Geschirrtuch und lege dieses \u00fcber die Sch\u00fcssel mit dem Vorteig. Lasse die Sch\u00fcssel auf der Arbeitsfl\u00e4che \u00fcber Nacht oder f\u00fcr mindestens 12 Stunden stehen.\u00a0<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Nach der Gehzeit des Vorteiges, bereiten wir den Hauptteig zu. Verr\u00fchre dazu erst einmal die Mandelmilch mit dem Mus und gebe den Ahornsirup und die Hefe hinzu und lasse es f\u00fcr ca. 3 min stehen. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Gebe das Mehl und das Glutenmehl in eine R\u00fchrsch\u00fcssel von einer K\u00fcchenmaschine und gebe den Vorteig sowie das Hefegemisch hinzu. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Jetzt verknete den Teig mit einem Knethaken f\u00fcr ca. 10 min. Das Salz kannst du nach ca. 5 min kneten hinzugeben.\u00a0<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Der Teig sollte leicht feucht aber elastisch sein und nicht mehr am Sch\u00fcsselrand kleben. Sollte der Teig zu trocken sein, gebe einfach noch etwas Wasser hinzu. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Ist der Teig zu klebrig, sodass er noch am Sch\u00fcsselrand klebt, gebe einfach etwas mehr Mehl hinzu. Nun decke den Teig mit einem feuchten Geschirrtuch ab und lasse diesen f\u00fcr ca. 1 Std. gehen.\u00a0<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Nun teile den Teig in 8 gleich gro\u00dfe Teile und knete diese zu einer Kugel. Rolle die Teigst\u00fccke oval aus. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">13 cm lang und 7 cm breit. Von der langen Seite her faltest du die Seiten in die Mitte, sodass diese aufeinander legen. Jetzt lege die Br\u00f6tchen auf ein mit Backpapier ausgelegtes Backblech. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Dabei lege die Br\u00f6tchen mit einem Abstand von ca. 2 cm auseinander. Nun decke die Br\u00f6tchen mit einem feuchten Geschirrtuch ab und lasse diese f\u00fcr ca. 30 min gehen. Lasse die Sch\u00fcssel auf der Arbeitsfl\u00e4che \u00fcber Nacht oder f\u00fcr mindestens 12 Stunden stehen.\u00a0<\/div><\/li><li id=\"wprm-recipe-9217-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;margin-left: 20px;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Nach der Gehzeit des Vorteiges, bereiten wir den Hauptteig zu. Verr\u00fchre dazu erst einmal die Mandelmilch mit dem Mus und gebe den Ahornsirup und die Hefe hinzu und lasse es f\u00fcr ca. 3 min stehen. Gebe das Mehl und das Glutenmehl in eine R\u00fchrsch\u00fcssel von einer K\u00fcchenmaschine und gebe den Vorteig sowie das Hefegemisch hinzu. Jetzt verknete den Teig mit einem Knethaken f\u00fcr ca. 10 min. Das Salz kannst du nach ca. 5 min kneten hinzugeben.\u00a0<\/div><\/li><li id=\"wprm-recipe-9217-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;margin-left: 20px;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Der Teig sollte leicht feucht aber elastisch sein und nicht mehr am Sch\u00fcsselrand kleben. Sollte der Teig zu trocken sein, gebe einfach noch etwas Wasser hinzu. Ist der Teig zu klebrig, sodass er noch am Sch\u00fcsselrand klebt, gebe einfach etwas mehr Mehl hinzu. Nun decke den Teig mit einem feuchten Geschirrtuch ab und lasse diesen f\u00fcr ca. 1 Std. gehen.\u00a0<\/div><\/li><li id=\"wprm-recipe-9217-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;margin-left: 20px;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Nun teile den Teig in 8 gleich gro\u00dfe Teile und knete diese zu einer Kugel. Rolle die Teigst\u00fccke oval aus. 13 cm lang und 7 cm breit. Von der langen Seite her faltest du die Seiten in die Mitte, sodass diese aufeinander legen. Jetzt lege die Br\u00f6tchen auf ein mit Backpapier ausgelegtes Backblech. Dabei lege die Br\u00f6tchen mit einem Abstand von ca. 2 cm auseinander. Nun decke die Br\u00f6tchen mit einem feuchten Geschirrtuch ab und lasse diese f\u00fcr ca. 30 min gehen.
