Du nimmst einfach alle Zutaten und p\u00fcrierst sie in einem Hochgeschwindigkeitsmixer, bis du ein Pulver hast. (<a href=\"https:\/\/veeatcookbake.com\/de\/veganes-huehnerbruehe-pulver\/\"><strong>Detailliertes Rezept f\u00fcr das vegane H\u00fchnerbr\u00fchpulver<\/strong><\/a>)<\/p>\n\n\n\n<p>Du kannst es jetzt in einen luftdichten Beh\u00e4lter f\u00fcllen.<\/p>\n\n\n\n<p>Jetzt bereiten wir den Seitan-Teig vor. Mische die feuchten Zutaten zusammen. Verwende alle Zutaten au\u00dfer dem Glutenpulver. Ich verwende auch gerne meinen Hochleistungsmixer, um zu mixen, bis eine cremige Konsistenz ohne St\u00fcckchen erreicht ist.<\/p>\n\n\n\n<p>Du gie\u00dft die Creme in eine gro\u00dfe R\u00fchrsch\u00fcssel. Ich benutze die Sch\u00fcssel von meinem Standmixer und mische alle Zutaten.<\/p>\n\n\n\n<p>Nun mit den Knethaken einer K\u00fcchenmaschine f\u00fcr ca. 10 Minuten. Die Au\u00dfenseite sollte gl\u00e4nzend und dehnbar sein und nicht an der Sch\u00fcssel kleben. Der Teig ist noch relativ feucht. Aber wir wollen es so.<\/p>\n\n\n\n<p>Jetzt kannst du den Teig zu einer Kugel formen oder drei Str\u00e4nge daraus machen und zu einem Zopf flechten. In ein K\u00e4setuch oder in Backpapier legen. Wenn du m\u00f6chtest, kannst du es auch in Alufolie einwickeln.<\/p>\n\n\n\n<p><strong>Den veganen Festtagsbraten f\u00fcllen:<\/strong> Wenn du den Seitan f\u00fcllen m\u00f6chtest, tust du das, bevor du den Teig formst. Teile den Seitan in zwei Teile.<\/p>\n\n\n\n<p>Rolle beide Teile aus und gebe die vegane F\u00fcllung auf einen Teil und bedecke die F\u00fcllung mit dem anderen Teil.<\/p>\n\n\n\n<p>Nun den runden Seitan wie oben beschrieben in ein Mulltuch geben und oben zubinden.<\/p>\n\n\n\n<p>Verwende nun einen ausreichend gro\u00dfen Dampftopf mit Dampfkorb. Ich nehme meinen Schnellkochtopf und lasse ihn etwa 1 Stunde d\u00e4mpfen. Wenn er fertig und auf Raumtemperatur abgek\u00fchlt ist, entferne das Seihtuch.<\/p>\n\n\n\n<p>Lasse das Weizenfleisch 1\u20132 Tage im K\u00fchlschrank. Der Geschmack und die Textur des gesamten Bratens sind nach ein oder zwei Tagen am besten.<\/p>\n\n\n\n<p>Bereite als N\u00e4chstes die Bestreichfl\u00fcssigkeit f\u00fcr die Reispapierhaut vor, um eine knusprige Haut zu erhalten. Einfach alle Zutaten mischen.<\/p>\n\n\n\n<p>Den Ofen auf 180 \u00b0C vorheizen und den veganen Putenbraten auf ein mit Backpapier ausgelegtes Backblech legen.<\/p>\n\n\n\n<p>Nimm nun zwei Reispapierbl\u00e4tter und tauche sie in eine Sch\u00fcssel mit Wasser. Das Reispapier sollte jetzt weich sein. Du kannst es auf den Seitan legen, das soll sp\u00e4ter die Haut sein.<\/p>\n\n\n\n<p>Alle Zutaten f\u00fcr die Backfl\u00fcssigkeit in einer kleinen Sch\u00fcssel verquirlen. Jetzt bedeckst du sie mit der Marinade \/ Bratfl\u00fcssigkeit und backst den Seitan f\u00fcr etwa 40 Minuten. Aber du kannst eine fertige Gew\u00fcrzmischung kaufen. Ich liebe den Geschmack, der Gerichten hinzugef\u00fcgt wird.<\/li><li><strong>Kichererbsen<\/strong>: Statt gekochter Kichererbsen kannst du auch festen Tofu oder Seidentofu verwenden, wenn du m\u00f6chtest. Beides wird super funktionieren.<\/li><li><strong>Glutenpulver<\/strong>: Ich wei\u00df, dass Seitan aus Weizenglutenmehl hergestellt wird. Ich habe irgendwo gelesen, dass man auch Erbsenprotein verwenden kann. Ich w\u00fcrde etwas weniger nehmen, etwa 600-700 g. Aber ausprobieren muss man es selbst. In ein K\u00e4setuch oder in Backpapier legen.
