Die restlichen Zutaten in einer Sch\u00fcssel zu einem Teig verr\u00fchren und das Paniermehl in eine zweite Sch\u00fcssel geben. Tauche die Zwiebel zuerst in den Teig und dann in die Semmelbr\u00f6sel.<\/p>\n\n\n\n<p>Heize den Ofen auf 175 \u00b0C  vor und lege die Zwiebeln auf ein mit Backpapier ausgelegtes Backblech. Nun die Zwiebeln etwa 7 Minuten backen. \u00dcberpr\u00fcfe immer wieder, ob sie eine sch\u00f6ne goldbraune Farbe haben. Wir wollen sie nicht verbrennen.<\/p>\n\n\n\n<p>In der Zwischenzeit kannst du die Pilze, Zwiebeln und Bohnen schneiden. Du kannst die gr\u00fcnen Bohnen nun 3 Minuten lang bei mittlerer bis hoher Hitze blanchieren.<\/p>\n\n\n\n<p>So erh\u00e4ltst du einen sch\u00f6nen Auflauf mit gr\u00fcnen Bohnen. Durch das Blanchieren bleibt die Farbe erhalten.<\/p>\n\n\n\n<p>Jetzt die gehackten Zwiebeln und gehackten Champignons in einer Pfanne bei mittlerer Hitze kr\u00e4ftig anbraten. Ich f\u00fcge immer einen Schluck Wasser hinzu. Nehme die eingeweichten Cashewn\u00fcsse und mixe sie mit Tapiokast\u00e4rke und Hefeflocken.<\/p>\n\n\n\n<p>Wenn die Zwiebeln eine sch\u00f6ne braune Farbe haben, kannst du sie mit etwas Wei\u00dfwein abl\u00f6schen oder sp\u00e4ter den Essig hinzuf\u00fcgen.<\/p>\n\n\n\n<p>F\u00fcge die Cashewcreme hinzu und gebe Sojasauce (Kokosnuss-Aminos), Salz und Pfeffer nach Geschmack hinzu. Etwa 5 Minuten k\u00f6cheln lassen, bis eine cremige Pilzso\u00dfe entsteht.<\/p>\n\n\n\n<p>Stelle den klassischen Auflauf mit gr\u00fcnen Bohnen zusammen.<\/p>\n\n\n\n<p>Gebe die blanchierten gr\u00fcnen Bohnen in eine Auflaufform und gie\u00dfe die So\u00dfe dar\u00fcber.<\/p>\n\n\n\n<p>Belege den Auflauf mit den knusprigen Zwiebeln. Im Ofen bei 175 \u00b0C etwa 20 Minuten backen. Sollten die Zwiebeln zu dunkel werden, den Auflauf abdecken.<\/p>\n\n\n\n<p>Verleihe deinen veganen Auflauf mit gr\u00fcnen Bohnen mit etwas Folie zus\u00e4tzlichen Geschmack.<\/p>\n\n\n\n<p><strong>Hinweis<\/strong>: Wenn du keine Pilzst\u00fccke in deiner So\u00dfe magst, kannst du die So\u00dfe mit den Pilzen vermischen, um die Pilzcremesuppe zu erhalten. Du m\u00f6chtest auch, dass die So\u00dfe etwas fl\u00fcssiger ist als du von fr\u00fcher kennst. Dank der Cashewn\u00fcsse wird es beim Backen noch eindicken. Wenn es zu dick ist, f\u00fcge noch etwas pflanzliche Milch hinzu.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"substitutionen\"><strong>Substitutionen<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Pilze:<\/strong> Du kannst deine Lieblingspilze oder eine Pilzmischung wie Shiitake-Pilze oder Cremini-Pilze verwenden. Die einfachsten Funde in den L\u00e4den sind wei\u00dfe Champignons oder Baby-Bella-Pilze. Diese werden in dieser Version des veganen Auflaufs mit gr\u00fcnen Bohnen sehr gut funktionieren.<\/li><li><strong>Pflanzliche Milch<\/strong>: Normalerweise verwende ich unges\u00fc\u00dfte Mandelmilch, weil wir diese zu Hause haben. Du kannst auch Sojamilch oder Hafermilch verwenden.<\/li><li><strong>Cashewkerne<\/strong>: Wenn du keine Cashewkerne verwenden m\u00f6chtest, kannst du auch K\u00fcrbiskerne oder Sonnenblumenkerne verwenden. Daraus ergibt sich auch eine cremige So\u00dfe. Du kannst die Cashewcreme auch mit Kokosmilch verwenden.<\/li><li><strong>Tahini:<\/strong> Wir m\u00f6chten etwas Fett in der Marinade f\u00fcr die panierten Zwiebeln. Da ich keine vegane Butter verwende, verwende ich Tahini. Du kannst auch Mandelbutter oder Cashewbutter verwenden. Du m\u00f6chtest etwas, das ziemlich geschmacksneutral ist.<\/li><li><strong>Mehl:<\/strong> Ich liebe es, Vollkornmehl oder Dinkelmehl anstelle von Allzweckmehl zu verwenden. Du kannst aber auch deine bevorzugte glutenfreie Mehlmischung verwenden.<\/li><li><strong>Sojasauce: <\/strong>Wie bereits erw\u00e4hnt, kannst du als glutenfreie Sojasaucen-Alternative ganz einfach auf Tamari-Sauce umsteigen.
