Mit diesem super fluffigen Vollkornfladenbrot (D\u00f6nerbrot) erh\u00e4ltst du eine ges\u00fcndere Variante des traditionell t\u00fcrkischen Fladenbrots. Mit einer luftig lockeren Krume und einer leicht knusprigen Kruste, genau so wie es sein soll, eignet sich dieses leckere Fladenbrot mit Hefe als Sandwich- oder D\u00f6nerbrot.&nbsp;<\/span><\/p>\n<p><em><span style=\"font-weight: 400;\">vegan | Vollkorn | vollwertig | \u00f6lfrei | milchfrei | laktosefrei | weizenfrei | eifrei |vegetarisch&nbsp;<\/span><\/em><!--more--><\/p>\n<p><span style=\"font-weight: 400;\">Was k\u00f6nnte besser schmecken als ein Sandwich, Gyros, D\u00f6ner mit frisch gebackenem und gesunden, t\u00fcrkischen Fladenbrot? Du wei\u00dft nicht nur genau was in deinem Brot enthalten ist, es schmeckt auch noch viel besser als das Gekaufte. Und seien wir mal ehrlich selbst zubereitete Sachen sind einfach besser, oder? Und das Beste an dem Brot, es ist absolut nicht kompliziert es selbst zu backen. Und w\u00e4hrend der Gehzeit, kannst du sogar anderen T\u00e4tigkeiten nachgehen, zum Beispiel meine anderen Rezepte durchst\u00f6bern.&nbsp;<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">Wie wird Fladenbrot gebacken?&nbsp;<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">Hast du schon mal Brot gebacken?! Wenn ja, dann wei\u00dft du sicherlich, dass das Zeitaufwendigste das Gehen des Teiges ist. Und das kann der Teig auch ganz gut ohne dich, dabei musst du nicht stehen bleiben und zu schauen. Wir bereiten f\u00fcr diese veganen Fladenbrote einen Vollkornhefeteig zu und lassen diesen gut gehen. Wenn du die M\u00f6glichkeit hast, den Teig den Abend vorher machen, und sp\u00e4ter einfach in den K\u00fchlschrank zugedeckt stellen. Gerade dann hat die Hefe Zeit zu Arbeiten und dein D\u00f6nerbrot wird sch\u00f6n fluffig und locker wie auf den Fotos.&nbsp;<\/span><\/p>\n<h3><span style=\"font-weight: 400;\">Welche Mehlsorte eignet sich am besten f\u00fcr das Brot?&nbsp;<\/span><\/h3>\n<p><span style=\"font-weight: 400;\">Ich nehme gerne Dinkelk\u00f6rner und mahle diese mit meinem Hochleistungsmixer schnell zu feinem Mehl. Du kannst auch gerne Dinkelvollkornmehl f\u00fcr die Flatbreads verwenden. Wenn du kein Fan von Vollkornmehl bist, kannst du auch helles Dinkelmehl oder auch Weizenmehl verwenden. Oder auch verschiedene Mehle z.B. Vollkornmehl und helles Dinkelmehl mischen. Wir verwenden nur Vollkornmehl, da ich die K\u00f6rner in gro\u00dfen Menge bestelle und so immer welche griffbereit habe. Was du bei der Zubereitung des Kebab-Brotes beachten solltest, ist dass du evtl. die Wasser- und Mehlmenge anpassen musst. Wenn du den Teig knetest, und der kommt der Teig klebrig vor, dann f\u00fcge noch etwas mehr Mehl hinzu, und wenn der Teig trocken wirkt, f\u00fcge etwas mehr Wasser hinzu. Daher ben\u00f6tigen wir auf jeden Fall Mehl und Hefe. Des Weiteren werden wir Pflanzendrink (Soja, Mandel oder Reis), Wasser, etwas Ahornsirup, Nussmus oder Samenmus (Tahini) und Salz ben\u00f6tigen. Aus diesen Zutaten kreieren wir ein \u00fcberaus leckeres und super fluffiges Fladenbrot.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Mit&nbsp; Aquafaba (Abtropfwasser von Kichererbsen) und etwas Kurkuma bestreichen wir dann die Fladenbrote und lassen diese, im Backofen backen.<\/span><\/p>\n<h3><span style=\"font-weight: 400;\">Was sollte ich beim Backen dieser veganen Fladenbrote beachten?&nbsp;<\/span><\/h3>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Wenn du den Teig zu bereitest, dann bereite den Teig zuerst ohne Salz zu. Das hilft dabei, dass die Hefe sich besser mit dem Mehl verbindet und der Teig besser aufgeht. Nachdem du den Teig f\u00fcr ca. f\u00fcnf Minuten geknetet hast, kannst du das Salz zu dem Fladenbrotteig geben.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Bei Vollkornteigen ist es wichtig, dass diese Zeit haben zum Gehen, damit die Hefe auch aktiv ist und die Flatbread beim Backen aufgehen.&nbsp;<\/span><\/li>\n<\/ul>\n<h3><span style=\"font-weight: 400;\">Sesam und K\u00fcmmel verleihen dem Brot eine besondere Note<\/span><\/h3>\n<p><span style=\"font-weight: 400;\">Ich bestreue gerne unsere Fladenbrote mit Sesam (hellen und schwarzen) und oder K\u00fcmmel. So bekommt das vegane Brot nochmal einen besonderen Geschmack. Wenn du das Fladenbrot im Brotkasten aufbewahrst wird es schnell trocken und es schmeckt einfach nicht mehr so gut wie am ersten Tag.&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Bitte backe das einfache Fladenbrot kurz auf und es schmeckt wieder wie frisch gebacken.
