Getrocknete Tomaten in kleine St\u00fccke schneiden und in hei\u00dfem Wasser einweichen.<\/p>\n\n\n\n<p>Die Cashewn\u00fcsse mit dem Wasser oder der Gem\u00fcsebr\u00fche, 1 TL Zitronensaft, \u00bd TL Salz, \u00bc TL Pfeffer und 2 EL Hefeflocken in einem Hochleistungsmixer zu einer cremigen Sauce mixen.<\/p>\n\n\n\n<p>Zwiebel und Knoblauch sehr fein w\u00fcrfeln und in einer Pfanne mit etwas Wasser bei mittlerer Hitze anschwitzen.<\/p>\n\n\n\n<p>Die abgetropften sonnengetrockneten Tomaten dazugeben und mit den Zwiebeln anschwitzen. Cashewsauce, 400 g Tomaten und 1 EL Tomatenmark zugeben und gut verr\u00fchren. Lasse es k\u00f6cheln, du wirst sehen, wie die Sauce eindickt.<\/p>\n\n\n\n<p>Nun den Spinat dazugeben und gut umr\u00fchren. F\u00fcge die gekochten Nudeln hinzu, wenn der Spinat hineinkommt.<\/p>\n\n\n\n<p>Du kannst die Nudeln mit Pinienkernen oder selbstgemachtem veganem Parmesan bestreuen. Du kannst auch glutenfreie Nudeln wie Linsennudeln oder Kichererbsennudeln, Zoodles (Zucchininudeln) verwenden.<\/li><li><strong>Cashews:<\/strong> Die Cashews verhelfen uns zu einer cremigen, veganen So\u00dfe. Du kannst statt einer selbstgemachten Cashewcreme auch eine Creme mit Sonnenblumenkernen machen. Dies ist eine etwas g\u00fcnstigere Alternative. Du kannst auch Kokosmilch verwenden.<\/li><li><strong>Gem\u00fcsebr\u00fche:<\/strong> Wenn du keine Gem\u00fcsebr\u00fche zur Hand hast, verwende einfach Wasser. Gem\u00fcsebr\u00fche verwende ich gerne f\u00fcr vegane cremige Nudeln, die ich selbst mache, um ihr mehr Geschmack zu verleihen.<\/li><li><strong>Spinat: <\/strong>Du kannst hier frischen oder gefrorenen Spinat verwenden. Ich bevorzuge hier frisch. Du kannst auch anderes Blattgem\u00fcse wie Gr\u00fcnkohl verwenden.<\/li><li><strong>Sonnengetrocknete Tomaten<\/strong>: Ich bevorzuge die sonnengetrockneten Tomaten ohne \u00d6l, aber du kannst auch in \u00d6l eingelegte sonnengetrocknete Tomaten verwenden.<\/li><\/ul>\n\n\n\n<h2 id=\"variationen\"   class=\"wp-block-heading\" ><br>Variationen<\/h2>\n\n\n\n<p id=\"variationenfur-ein-perfektes-abendessen-unter-der-woche-konnen-sie-mit-diesem-rezept-immer-etwas-abwechslung-bringen-und-es-wird-nie-langweilig\">F\u00fcr ein perfektes Abendessen unter der Woche kannst mit diesem Rezept immer etwas Abwechslung bringen und es wird nie langweilig.<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Italienisch<\/strong>: F\u00fcge diesem einfachen Nudelrezept etwas italienisches Gew\u00fcrz hinzu.
