Gebe sie in eine Sch\u00fcssel und gie\u00dfe die hei\u00dfe Milch dar\u00fcber. Decke die Sch\u00fcssel mit einem Teller, einem Geschirrtuch oder einem Deckel ab, um den Wasserdampf in der Sch\u00fcssel zu halten. So werden die W\u00fcrfelrollen ganz weich.<br>Nun die Zwiebelh\u00e4lfte in kleine W\u00fcrfel schneiden und die Zwiebelw\u00fcrfel in einer Pfanne mit etwas Wasser bei mittlerer Hitze anbraten. F\u00fcge weiterhin etwas Wasser hinzu, bis die Zwiebeln eine br\u00e4unliche Farbe haben. Jetzt die gehackte Petersilie dazugeben und kurz anbraten. Schalte die Herdplatte aus.<\/p>\n\n\n\n<p><br>Pr\u00fcfe, ob die Br\u00f6tchenw\u00fcrfel weich sind. Wenn du trockene St\u00fccke siehst, mache diese etwas kleiner und mische sie unter die weichen St\u00fccke. Durch das Kneten sollten alle St\u00fccke weich werden. Dr\u00fccke die Brotst\u00fccke in der Hand, damit die \u00fcbersch\u00fcssige Milch abgegossen werden kann. Bei Bedarf eine zweite Sch\u00fcssel verwenden<br>Nun die Zwiebeln mit Petersilie und Kartoffelst\u00e4rke dazugeben.<br>Die Kn\u00f6delmasse mit Salz, Pfeffer und Muskatnuss w\u00fcrzen und zu runden Kn\u00f6deln formen. Der Teig sollte ganz gut zusammenhalten, ggf. etwas St\u00e4rke hinzuf\u00fcgen.<\/p>\n\n\n\n<p><br>Befeuchte deine H\u00e4nde und nimm so viel Kn\u00f6delteig, wie in eine Sch\u00f6pfkelle passt, und forme mit deinen nassen H\u00e4nden kleine Kn\u00f6del. So weitermachen, bis der Kn\u00f6delteig aufgebraucht ist.<\/p>\n\n\n\n<p>Wenn der Teig schlecht an den H\u00e4nden klebt, dann noch etwas Mehl untermischen.<\/p>\n\n\n\n<p><br>Bringe einen gro\u00dfen Topf mit Salzwasser bei starker Hitze zum Kochen. Reduziere die Hitze auf mittlere Stufe, sodass das Wasser gerade noch k\u00f6chelt, und gebe die Kn\u00f6del langsam mit einem Schauml\u00f6ffel in das kochende Wasser. Mache einen Probekn\u00f6del. Das hei\u00dft, du kochst zuerst einen Kn\u00f6del, wenn er zusammenh\u00e4lt, kannst du weitermachen. Sollte der Kn\u00f6del auseinanderfallen, musst du noch etwas St\u00e4rke oder Mehl hinzuf\u00fcgen.<\/p>\n\n\n\n<p><br>Es dauert etwa 20 Minuten. Die Kn\u00f6del sind fertig, wenn sie an der Oberfl\u00e4che schwimmen.<\/p>\n\n\n\n<p><br><strong>Hinweis<\/strong>: Wir wollen kein sprudelnd kochendes Wasser, sonst zerfallen die Semmelkn\u00f6del.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"rahmpilze-1\"><strong>Rahmpilze<\/strong><\/h3>\n\n\n\n<p>Die Pilze putzen (m\u00f6glichst ohne Wasser) und bei Bedarf halbieren oder vierteln.<\/p>\n\n\n\n<p><br>Zwiebel und Knoblauch fein hacken.<br>Zwiebel und Knoblauch in einer beschichteten Pfanne anbraten. Immer wieder etwas Wasser hinzuf\u00fcgen.<\/p>\n\n\n\n<p><br>Nun die Pilze dazugeben und kr\u00e4ftig anbraten. Und mit Wei\u00dfwein abl\u00f6schen. Solange der Wei\u00dfwein vorhanden ist, kochen lassen.<br>Die eingeweichten Cashewn\u00fcsse mit dem Wasser in einem Hochleistungsmixer mixen, bis eine sch\u00f6ne, glatte Masse entsteht. Bei Bedarf durch ein Haarsieb sieben.<br>Zu den Pilzen geben und mit den restlichen Gew\u00fcrzen w\u00fcrzen.<br>Zum Kochen bringen. Jetzt sollte die So\u00dfe eindicken. Sollte es zu dick sein, noch etwas Wasser hinzuf\u00fcgen. Du hast noch ein paar alte Brezeln \u00fcbrig, mach daraus Brezenkn\u00f6del.<\/li><li><strong>Mandelmilch<\/strong>: Du kannst auch verschiedene pflanzliche Milch wie Sojamilch oder Hafermilch verwenden.<\/li><li><strong>Kartoffelst\u00e4rke<\/strong>: Ich verwende gerne etwas Kartoffelst\u00e4rke, um sie zusammenzuhalten. Ich verwende es als Eiersatz. Alternativ kannst du auch Sojamehl verwenden.<\/li><\/ul>\n\n\n\n<h2 id=\"aufbewahrung\"   class=\"wp-block-heading\" ><strong>Aufbewahrung<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>\u00dcbrig gebliebene Semmelkn\u00f6del k\u00f6nnen im K\u00fchlschrank in einem luftdichten Beh\u00e4lter bis zu 5 Tage aufbewahrt werden.<\/li><li>Semmelkn\u00f6del lassen sich leicht einfrieren. Du kannst einfach eine gr\u00f6\u00dfere Menge veganer Kn\u00f6del zubereiten und diese direkt nach dem Formen auf einem Teller oder Backblech in den Gefrierschrank legen. Lasse sie einfrieren und f\u00fclle sie dann in Beh\u00e4lter. Wenn du die Kn\u00f6del kochen m\u00f6chtest, kannst du die gefrorenen Kn\u00f6del einfach wie gewohnt in hei\u00dfem Wasser kochen. Ich pers\u00f6nlich liebe es, gro\u00dfe Mengen zu kochen und dann einzufrieren, sodass wir immer etwas Leckeres, Selbstgemachtes zur Hand haben. Vor allem, wenn man einen faulen Tag hat, und ich muss gestehen, dass ich das oft mit zwei kleinen Kindern habe. Es ist m\u00f6glich, dass die Kn\u00f6del auseinanderfallen. Das gilt \u00fcbrigens auch f\u00fcr leckere Kartoffelkn\u00f6del und andere Kn\u00f6delsorten. Normalerweise lasse ich das Wasser kurz kochen, schalte dann den Herd aus und warte, bis das Wasser gerade noch k\u00f6chelt.<\/li><li>Die Kn\u00f6del mit einer Schaumkelle aus dem Wasser sch\u00f6pfen. Die Kn\u00f6del sind gar, wenn sie an der Oberfl\u00e4che schwimmen.<\/li><li>Schneide das Brot in gr\u00f6\u00dfere und nicht zu kleine St\u00fccke. Wir wollen sch\u00f6ne grobe und luftige Semmelkn\u00f6del. Wenn du die Br\u00f6tchen zu klein schneidest, kann die Konsistenz leicht variieren.<\/li><li>Semmelkn\u00f6del lassen sich ganz einfach ohne Ei zubereiten. Du musst nur herausfinden, wozu das Ei in einem Rezept dient. Hier zum Beispiel bei den Kn\u00f6deln dient das Ei zum Binden und macht die Kn\u00f6del luftig. Du kannst einfach St\u00e4rke verwenden.
