Und das geht auch super lecker in Vegan.&nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Wie du sicherlich schon mitbekommen hast, liebe ich es selbst zu backen. Egal ob Brezeln, Baguette oder andere Teige. So auch backe ich gerne mein Brot selbst.&nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Seitdem wir in den USA wohnen und wir mal ein anderes Brot als dieses Toastbrotartige Brot essen m\u00f6chten, sind wir zumindest in der Gegend wo wir wohnen, auf selbstgebackenes Brot angewiesen. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Und daher bietet sich ein solches K\u00f6rner-Nuss-Vollkornbrot an, welches du in Handumdrehen zubereitet hast.\u00a0<\/span><\/p>\n\n\n\n\n\n<h2 class=\"wp-block-heading\"><span style=\"font-weight: 400;\">Zutaten<\/span><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">Du brauchst nicht viele Zutaten um ein solches Brot zu backen und wenn du einen gut sortierten Vorratsschrank hast, hast du vielleicht sogar das meiste schon zu Hause.\u00a0<\/span><\/p>\n\n\n\n<p>Die genauen Mengenangaben findest du weiter unten in der Rezeptkarte.<\/p>\n\n\n\n<p><span class=\"blast mmt-sentence\" aria-hidden=\"true\">Vollkornmehl (Dinkel<\/span>\u00a0<span class=\"blast mmt-sentence\" aria-hidden=\"true\">oder<\/span>\u00a0<span class=\"blast mmt-sentence\" aria-hidden=\"true\">Weizen) *<\/span><\/p>\n\n\n\n<p><span class=\"blast mmt-sentence\" aria-hidden=\"true\">K\u00f6rner, Saaten, N\u00fcsse usw.** + zum Bestreuen der Kastenform<\/span><\/p>\n\n\n\n<p><span class=\"blast mmt-sentence\" aria-hidden=\"true\">Himalaya Salz oder Meersalz<\/span><\/p>\n\n\n\n<p><span class=\"blast mmt-sentence\" aria-hidden=\"true\">Wasser<\/span><\/p>\n\n\n\n<p><span class=\"blast mmt-sentence\" aria-hidden=\"true\">frische Hefe<\/span><\/p>\n\n\n\n<p><span class=\"blast mmt-sentence\" aria-hidden=\"true\">Apfelessig<\/span><\/p>\n\n\n\n<p><span class=\"blast mmt-sentence\" aria-hidden=\"true\">Rogensauerteig\/ Alter Ansatz aus dem K\u00fchlschrank (optional)<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span style=\"font-weight: 400;\">Brauche ich eine Kastenform f\u00fcr dieses Brot? <\/span><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">Der Brotteig ist relativ \"fl\u00fcssig\" und klebrig und dieser Teig eignet sich am Besten f\u00fcr eine Kastenform. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Wenn du keine da hast, kannst du das Brot versuchen zu einem Laib zu formen. Und dann in einem Topf zu backen. Dazu nehme einen Backofen festen Topf und heize diesen f\u00fcr ca 30-45 min vor.\u00a0<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Gebe das Brot in den Topf und lege den Deckel drauf. Jetzt kannst du das Brot f\u00fcr ca. 50 min in dem Topf backen.&nbsp;<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span style=\"font-weight: 400;\">Zubereitung<\/span><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">Als erstes kannst du das Wasser mit der Hefe und dem Ahornsirup vermengen. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Nun mahle die Haferflocken. Dazu nehme ich einfach meinen Hochleistungsmixer. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Jetzt vermenge das Dinkelmehl oder alternativ Weizenmehl mit dem Hafermehl. Gebe das Wasser Hefe-Gemisch hinzu und lasse es f\u00fcr ca 3 Minuten mit dem Knethaken einer K\u00fcchenmaschine durchkneten. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Und denke die Sch\u00fcssel mit einem feuchten\u00a0 Geschirrtuch ab.\u00a0<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Jetzt nehme die Samen und N\u00fcsse und r\u00f6ste diese kurz an. \u00dcbergie\u00dfe diese mit etwas Wasser, damit der Brotteig nachher nicht zu trocken wird. Samen und N\u00fcsse k\u00f6nnen relativ viel Wasser aufnehmen.&nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Lasse es f\u00fcr ca 30 min stehen, so lange kann der Teig gehen.&nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Jetzt gie\u00dfe das \u00fcberfl\u00fcssige Wasser weg und gebe die Samen und N\u00fcsse mit dem Salz zum Teig und verknete das ganze f\u00fcr ca. 7 min.&nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Gebe den Brotteig in eine Kastenform und decke diesen ab. Heize den Backofen auf 200 C vor. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Der Teig sollte jetzt doppelt so hoch werden. Das kann etwas dauern. Bestreuen das Brot noch mit etwas Samen und Haferflocken. Gebe den Brotteig in den Backofen und backe diesen f\u00fcr ca. 50 min. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Jetzt hebe das Brot aus der Kastenform. Du kannst auch statt Haseln\u00fcsse, Waln\u00fcsse, Pecan N\u00fcsse und andere verwenden.\u00a0<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span style=\"font-weight: 400;\">Aufbewahrung<\/span><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">Wir geben es immer in einen Brotkasten. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Bitte beachte, dass ein reines Vollkornbrot schneller trocken wird als ein Brot mit Auszugsmehl. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Ich friere gerne einen Teil des Brotes ein und nehme es raus, wenn wir es essen. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Du kannst das Brot dann kurz aufbacken und es schmeckt wie frisch gebacken.<\/span><\/p>\n\n\n\n\n\n<h2 class=\"wp-block-heading\"><span style=\"font-weight: 400;\">Pro Tips zum Brotbacken<\/span><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">Gebe das Salz erst hinzu, wenn du den Teig mit der Hefe verknetet hast. Heize den Backofen auf 200 C vor. Der Teig sollte jetzt doppelt so hoch werden. Das kann etwas dauern. Bestreue das Brot noch mit etwas Samen und Haferflocken. Gebe den Brotteig in den Backofen und backe diesen f\u00fcr ca. 50 min. Jetzt hebe das Brot aus der Kastenform.
