Diese Laugenbrezel ohne Schweineschmalz hast du im Handumdrehen selber gebacken. Im \u00dcbrigen eigenet sich Dinkel Laugengeb\u00e4ck hervorragend f\u00fcr das n\u00e4chste vegane Picknick oder den Snack zwischendurch. Brezel schmecken nicht nur super lecker, sie sind auch noch Dank des Vollkornmehls und Tahini gesund.<\/p>\n<h2><!--more--><br \/>\n<img decoding=\"async\" class=\"size-full wp-image-10376 aligncenter\" src=\"https:\/\/veeatcookbake.com\/wp-content\/uploads\/2020\/04\/vegan-pretzel-01-2.jpg\" alt=\"\" width=\"600\" height=\"900\" srcset=\"https:\/\/veeatcookbake.com\/wp-content\/uploads\/2020\/04\/vegan-pretzel-01-2.jpg 600w, https:\/\/veeatcookbake.com\/wp-content\/uploads\/2020\/04\/vegan-pretzel-01-2-200x300.jpg 200w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><br \/>\nWie werden Brezeln selber gebacken?<\/h2>\n<p>Vegane Brezel selber herstellen ist gar nicht kompliziert. Als Erstes bereiten wir einen Vorteil vor, damit die Vollkornbrezel auch sch\u00f6n hochgeht. W\u00e4hrend der Vorteig \u00fcber Nacht ruht, Kann die Hefe schon ordentlich arbeiten und du wirst sehen, dass die vegane Brezel fluffig wird wie das Original. Als n\u00e4chstes Schritt bereiten wir einen homogenen Hefeteig zu, der nicht klebt. Dieser l\u00e4sst sich dann sp\u00e4t einfach zu Brezeln ausrollen.<\/p>\n<h3>Ich habe keine frische Hefe. Wie bereite ich die Brezel zu?<\/h3>\n<p>Du hast nur Trockenhefe zur Hand. Das ist absolut kein Problem. Auch mit Trockenhefe l\u00e4sst sich diese vegane Brezel ohne Probleme zubereiten.<\/p>\n<h3>Welches Mehl kann ich au\u00dfer Vollkornmehl verwenden?&nbsp;<\/h3>\n<p>Wenn du kein Vollkornmehl verwenden m\u00f6chtest, warum auch immer kannst du auch eins zu eins das Vollkornmehl mit Auszugsmehl (Dinkel oder Weizen) verwenden. Hier musst du nur drauf achten, dass du evtl. mehr Mehl hinzugeben musst, da Auszugsmehl weniger Wasser ben\u00f6tigt, als Vollkornmehl. Im Grunde bereiten wir keine Laugenbrezel zu, sondern Natronbrezel. Vielleicht hast du sogar Natron im K\u00fcchenschrank. Wir haben Natron z. B. immer auf Vorrat, da ich dieses auch gerne zum Putzen verwende. Die Brezeln werden auch mit der Natronmischung sch\u00f6n braun. Hier nehme ich am Liebsten meinen Backstein. Damit gelingen mir die Brezeln am besten. Sie werden sch\u00f6n dunkel und knusprig au\u00dfen und innen bleiben sie soft. Wie man sie vom B\u00e4cker kennt.<\/p>\n<h3>Wie werden Brezen so sch\u00f6n gl\u00e4nzend?&nbsp;<\/h3>\n<p>Hierzu ben\u00f6tigst du eine Spr\u00fchflasche mit Wasser. Wenn die Brezeln fertig gebacken sind, kannst du diese kurz mit Wasser bespr\u00fchen. Mache dies aber bitte direkt, wenn du sie aus dem Ofen nimmst und die Dinkelbrezeln noch hei\u00df sind.<\/p>\n<h3>Wie werden Brezeln geformt?&nbsp;<\/h3>\n<p>Zun\u00e4chst beginnst du damit, den Teig in gleichgro\u00dfe Teile zu teilen. Jeden Teigling rollst du in eine dickb\u00e4uchige Schlange aus. So dass die Mitte dicker ist, als die enden. Die Enden sollten schmaler werden. Jetzt legst du den Teigstrang in eine U-Form und legst die beiden Enden kreuzend \u00fcbereinander. Nun nimmst du die \u00fcberkreuzten Enden des Teigstrangs und legst sie unter das U. So das die Enden unter dem Teig fest sind. Hier kannst du die Teigstr\u00e4nge in der Mitte an dem \"dicken Bauch\" befestigen oder du legst ein Ende auf eine Seite und das andere Ende auf die andere Seite.<br \/>\nDr\u00fccke ganz leicht die Enden an den Teigstrang, damit diese fest bleiben.<br \/>\nDu kannst auch Teigknoten, Br\u00f6tchen, Stangen oder kleine Teigst\u00fccke daraus schneiden.<\/p>\n<p>&nbsp;<\/p>\n<h2>Was muss ich bei Vollkornmehl beachten?<\/h2>\n<p>Gerade bei Vollkornmehl ist eine lange Knet- und Gehzeit ganz wichtig, das den Teig nachher sch\u00f6n fluffig macht. Das Gluten muss richtig entwickelt werden und die&nbsp; Hefe muss ordentlich arbeiten, damit der Teig hochgeht und die Brezeln weich innen werden. Falls dir das Vollkornmehl zu kr\u00e4ftig schmeckt, kannst du auch mal schauen ob die Wei\u00dfweizenmehl als Vollkorn bekommst. Das nutze ich gerne hier in den USA. Wir bereiten gerne aus Brezelresten Kn\u00f6del. Dazu gehst du vor wie bei den Semmelkn\u00f6del anstatt Semmel bzw. Brot nimmst du einfach deine veganen Brezel. Dazu servieren wir gerne Rahmschwammerl bzw.. Rahmchampignons.<\/p>\n<h2>Was schmeckt zu den Brezeln?<\/h2>\n<ul>\n<li>Zu den Brezeln schmeckt z. B. mein <a href=\"https:\/\/veeatcookbake.com\/de\/veganer-obatzda\/\">authentischer Obatzda<\/a> oder s\u00fc\u00dfer Senf.<\/li>\n<li><a href=\"https:\/\/veeatcookbake.com\/de\/bayrisch-veganer-kartoffelsalat\/\">bayrischer Kartoffelsalat<\/a>, den ich ohne \u00d6l zubereite.<\/li>\n<li>Vegane Wei\u00dfw\u00fcrste<\/li>\n<li>Du kannst die Brezeln auch mit veganem K\u00e4se \u00fcberbacken.<\/li>\n<li>Oder einfach ohne alles essen. Einfach so blank.&nbsp;<\/li>\n<li>Du k\u00f6nntest aus dem Brezeleteig auch <a href=\"https:\/\/veeatcookbake.com\/de\/vegane-hexenfinger\/\">Hexenfinger<\/a> zubereiten<\/li>\n<\/ul>\n<h2>Brezel Herkunft : Woher kommt die Brezel?<\/h2>\n<p>Einer Legende nach wurde die Brezel von einem B\u00e4cker Mitte 14. Dabei schneide das Backpapier passend zu dem Backstein, damit du wei\u00dft wie viele Brezeln auf den Backstein passen.&nbsp;<\/li>\n<li>Ich verwende ein <a href=\"https:\/\/amzn.to\/3bDpi0J\">Cookie Backblech<\/a>, von dem man einfach die Brezeln vom Backblech auf den Backstein schieben kann.&nbsp;<\/li>\n<li>Verwende einen eher <a href=\"https:\/\/amzn.to\/3apVDXj\">breiten Topf<\/a> f\u00fcr die Brezeln hineinzutauchen. Das kann ca. 8 min dauern. Dazu lege ich ein feuchtes Tuch \u00fcber die Sch\u00fcssel.<\/div><\/li><li id=\"wprm-recipe-6293-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;margin-left: 20px;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Nun Teiglinge ca. 100g pro Teigling abstechen. Aus den Teiglingen Brezeln Formen. Dazu nehme ich eine Teigkugel. Rolle diese lange aus, so dass eine Schlange entsteht, die in der Mitte dicker ist und schmal zu den Enden ausl\u00e4uft.<\/div><\/li><li id=\"wprm-recipe-6293-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;margin-left: 20px;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Dann kann eine Brezel geformt werden dazu beide Enden in die H\u00e4nde nehmen und ein - bis  zweimal uberkreuzen und zu einer Brezel Formen.<\/div><\/li><li id=\"wprm-recipe-6293-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;margin-left: 20px;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Die Brezeln in einem B\u00e4ckerleinen  oder K\u00fcchentisch zugedeckt f\u00fcr ca. 1 Std gehen lassen. Den Backofen mit Backstein auf 250 C vorheizen.<\/div><\/li><li id=\"wprm-recipe-6293-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;margin-left: 20px;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Die Natronmischung in einem ausreichen gro\u00dfen Topf geben, sodas eine Brezel eingetunkt werden kann. Jetzt die Brezeln im K\u00fchlschrank oder Gefrierschrank anh\u00e4uten lassen. Das kann ca. 20 min dauern.<\/div><\/li><li id=\"wprm-recipe-6293-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;margin-left: 20px;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Jetzt die Natronlauge aufkochen und die Hitze wieder herunterstellen. Die Brezeln nacheinander f\u00fcr ca. 20-30 sec in der Mischung baden lassen.<\/div><\/li><li id=\"wprm-recipe-6293-step-0-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;margin-left: 20px;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Und auf Backpapier legen. Und ggf mit K\u00f6rnern oder Salz bestreuen. Das Backpapier mithilfe eines Backbleches auf den Backstein schieben und die Brezeln f\u00fcr ca. 15 min backen. Herausnehmen und sofort mit Wasser bespr\u00fchen.<\/div><\/li><li id=\"wprm-recipe-6293-step-0-10\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;margin-left: 20px;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Immer nur so viele Brezeln in die Natronmischung geben, wie du auf einmal backen kannst. Die restlichen Brezeln erst eintauchen, wenn die anderen Brezeln fertig sind.<\/div><\/li><li id=\"wprm-recipe-6293-step-0-11\" class=\"wprm-recipe-instruction\" style=\"list-style-type:
