Dieser Hefezopf ist in Handumdrehen zubereitet und braucht nur ein paar Zutaten. <\/p>\n\n\n\n<p>Bereite diesen Butterzopf f\u00fcr deine G\u00e4ste an Ostern als Brunch, Nachmittagstisch oder Snack zu.<\/p>\n\n\n\n<p>Dank des Aquafabas und der l\u00e4ngeren Knetzeit wird dieser Hefezopf so weich und zart. Dieser Beitrag kann Affiliate-Links enthalten. <a href=\"https:\/\/veeatcookbake.com\/de\/haftungsausschluss\/\">Mehr<\/a><\/em><\/p>\n\n\n\n<p>Bei uns gab es oft zur Kaffee- oder Kuchenzeit einen Hefezopf, in der Regel kauften wir diesen vom B\u00e4cker.<\/p>\n\n\n\n<p>Leider ist es schwer ein veganes Briochebrot oder in der Schweiz bekannt als Butterzopf zu finden, daher habe ich mich mal einem luftig zarten Hefezopf versucht. <\/p>\n\n\n\n<p>Uund ich muss sagen, dieser Hefezopf ist unglaublich toll gegl\u00fcckt und den wird es \u00f6fter geben, wenn ich nicht wei\u00df was ich machen soll.\u00a0<\/p>\n\n\n\n<p>Wie du vielleicht an meinen Rezept schon gesehen hast, versuche ich mehr Vollkornmehl und auf \u00d6l und wei\u00dfem Haushaltszucker zu verzichten.<\/p>\n\n\n\n<p>Daher habe ich hier f\u00fcr euch noch eine zweite Variante des veganen Hefezopfs zubereitet aus Vollkornmehl. <\/p>\n\n\n\n<p>Die ges\u00fcndere Version bereite ich gerne einen Abend vorher zu und lasse den Zopf \u00fcber Nacht im K\u00fchlschrank ruhen. So wird er richtig sch\u00f6n luftig und zart.<\/p>\n\n\n\n<p>Egal welche Variante du zu bereitest, getunkt in hei\u00dfer Schokolade schmeckt dieser weiche luftig, flauschig vegane Brioche mit einer zarten Krume, welches s\u00fcchtig macht.&nbsp;<a href=\"https:\/\/veeatcookbake.com\/de\/landing-page\/\"><\/a><\/p>\n\n\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Zutaten<\/strong><\/h2>\n\n\n\n<p>Hier siehst du eine kurze \u00dcbersicht was alles in dem veganen Hefezopf enthalten ist. <\/p>\n\n\n\n<p>Die genauen Mengenangaben findest du weiter unten in der Rezeptkarte.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">F\u00fcr die klassische Version:&nbsp;<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Mehl&nbsp;<\/li><li>Rohrohrzucker, Kokosbl\u00fctenzucker<\/li><li>Pflanzenmilch (Soja oder Mandel), ich benutze bei so Sachen gerne Soja)<\/li><li>Oliven\u00f6l<\/li><li>Aquafaba<\/li><li>Trockenbackhefe<\/li><li>Kurkuma<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">F\u00fcr die Vollkorn Version:&nbsp;<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Vollkornmehl<\/li><li>Glutenpulver<\/li><li>Ahornsirup oder Dattelsirup&nbsp;<\/li><li>Pflanzenmilch (Soja oder Mandel), ich benutze bei so Sachen gerne Soja)<\/li><li>&nbsp;Cashew Butter oder Mandelbutter<\/li><li>Aquafaba<\/li><li>Trockenbackhefe<\/li><li>&nbsp;Kurkuma<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Zubereitung<\/strong><\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Klassische Version<\/h3>\n\n\n\n<p>Vermenge alle Zutaten in einer R\u00fchrsch\u00fcssel. Und verknete den Teig f\u00fcr ca. 15 min. Dazu verwende ich eine K\u00fcchenmaschine.&nbsp;<\/p>\n\n\n\n<p>Der Teig sollte leicht klebrig sein aber sich vom Sch\u00fcsselrand l\u00f6sen.<\/p>\n\n\n\n<p> Sollte der Teig zu trocken sein, gebt langsam etwas Mandelmilch dazu. Ist der Teig zu klebrig, gebe langsam etwas mehr Mehl hinzu.\u00a0<\/p>\n\n\n\n<p>Nun decke die Sch\u00fcssel mit einem feuchten Geschirrtuch ab und lasse den Teig f\u00fcr 1 Std. gehen. Schlage dabei einmal alle 20 min den Teig mit der Hand.&nbsp;<\/p>\n\n\n\n<p>Nach der Stunde Gehzeit heize den Backofen auf 180 \u00b0C vor.&nbsp;<\/p>\n\n\n\n<p>Jetzt knete den Teig nochmal kurz mit der Hand durch und rolle diesen rechteckige aus. <\/p>\n\n\n\n<p>Steche nun ca. 3 gleichgro\u00dfe Teile ab. Falte jeden Strang von der langen Seite in die Mitte.<\/p>\n\n\n\n<p>Zuerst eine Seite zur Mitte, dann von der anderen Seite in der Mitte, sodass eine Art Rolle entsteht. <\/p>\n\n\n\n<p>Nun flechte aus den Schlangen einen Zopf.\u00a0<\/p>\n\n\n\n<p>Du kannst den Zopf in einer Kastenform backen oder auf einem Backblech ohne.&nbsp;<\/p>\n\n\n\n<p>Lege das Backblech mit Backpapier aus und lege den Zopf darauf oder in eine vorbereitete Kastenform.<\/p>\n\n\n\n<p>Nun lasse den Teig nochmal f\u00fcr ca. 1 Std. gehen. Dabei sollte der Teig an Volumen zu nehmen.&nbsp;<\/p>\n\n\n\n<p>Jetzt bestreiche den Zopf mit Aquafaba. Und lasse ihn auf einem Kuchengitter abk\u00fchlen.&nbsp;<\/p>\n\n\n\n<p>Backe den Zopf f\u00fcr 30 min. Jetzt bestreiche den heizen Hefezopf mit Aquafaba wieder.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Vollkornversion:<\/h3>\n\n\n\n<p>Vermenge zuerst die Mandelmilch mit dem Nussmus, Aquafaba, Ahornsirup. Gebe die Hefe zum Mehl und Glutenpulver und vermenge diese.<\/p>\n\n\n\n<p>Nun gebe die Nussmus-Mischung zu dem Mehl und verknete den Teig f\u00fcr ca. 10 min. Dazu verwende ich eine K\u00fcchenmaschine. <\/p>\n\n\n\n<p>Der Teig sollte leicht klebrig sein, aber sich vom Sch\u00fcsselrand l\u00f6sen.\u00a0<\/p>\n\n\n\n<p>Jetzt lasse den Teig f\u00fcr 1 Stunde an einem warmen Ort ruhen. Dabei schlage alle 20 min den Teig mit der Hand.<\/p>\n\n\n\n<p>Nehme den Teig und rolle diesen rechteckige aus. Teile das Rechteck in 3 Str\u00e4nge und falte die Str\u00e4nge von der langen Seite zur Mitte. <\/p>\n\n\n\n<p>Und von der anderen Seite auf die gefaltete Seite. Es sollte nun wie eine Schlange aussehen.<\/p>\n\n\n\n<p>Nun flechte aus den 3 Str\u00e4ngen einen Hefezopf und gebe den Hefezopf in eine Kastenform, die mit Backpapier ausgelegt ist. <\/p>\n\n\n\n<p>Dabei sollte das Backpapier an der oberen Seite herausschauen.<\/p>\n\n\n\n<p>Lasse den Teig bei Raumtemperatur f\u00fcr 1 Stunde gehen und lege diesen dann in den K\u00fchlschrank zugedeckt \u00fcber Nacht.&nbsp;<\/p>\n\n\n\n<p>Nehme den Hefezopf aus dem K\u00fchlschrank und heize den Backofen auf 180 \u00b0C vor. <\/p>\n\n\n\n<p>Du kannst den Hefezopf aus der Form holen, indem du den Zopf am Backpapier heraushebst oder du backst ihn in der Form.<\/p>\n\n\n\n<p>Nach ca. 1 Std. kannst du den Hefezopf mit Aquafaba&nbsp; bestreichen und f\u00fcr ca. 30 min backen.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Tips &amp; Tricks<\/strong><\/h2>\n\n\n\n<p>Bei diesem veganen Hefezopf ist es wichtig lange zu kneten, damit der Hefeteig geschmeidig und zart wird. <\/p>\n\n\n\n<p>Am besten ist es, wenn du diesen f\u00fcr ca. 10 - 15 min knetest, dann merkst du schon das er zart wird und nachgibt.<\/p>\n\n\n\n<p>Und genau diese Eigenschaft ist wichtig, damit der Teig sch\u00f6n aufgeht und luftig wird. <\/p>\n\n\n\n<p>Welche Tipps hast du um einen zarten Hefezopf zu zaubern oder einen zarten Hefeteig zu kreieren.<\/p>\n\n\n\n<p>Lasse es mich in den Kommentaren unten lesen. Steche nun ca. 3 gleichgro\u00dfe Teile ab. Falte jeden Strang von der langen Seite in die Mitte. Zuerst eine Seite zur Mitte, dann von der anderen Seite in der Mitte, sodass eine Art Rolle entsteht. Gebe die Hefe zum Mehl und Glutenpulver und vermenge diese. Nun gebe die Nussmus-Mischung zu dem Mehl und verknete den Teig f\u00fcr ca. 10 min. Dazu verwende ich eine K\u00fcchenmaschine. Der Teig sollte leicht klebrig sein, aber sich vom Sch\u00fcsselrand l\u00f6sen.\u00a0<\/div><\/li><li id=\"wprm-recipe-10043-step-0-11\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;margin-left: 20px;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Jetzt lasse den Teig f\u00fcr 1 Stunde an einem warmen Ort ruhen. Nun flechte aus den 3 Str\u00e4ngen einen Hefezopf und gebe den Hefezopf in eine Kastenform, die mit Backpapier ausgelegt ist. Dabei sollte das Backpapier an der oberen Seite herausschauen. Lasse den Teig bei Raumtemperatur f\u00fcr 1 Stunde gehen und lege diesen dann in den K\u00fchlschrank zugedeckt \u00fcber Nacht.\u00a0<\/div><\/li><li id=\"wprm-recipe-10043-step-0-13\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;margin-left: 20px;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Nehme den Hefezopf aus dem K\u00fchlschrank und heize den Backofen auf 180 \u00b0C vor. Du kannst den Hefezopf aus der Form holen, indem du den Zopf am Backpapier heraushebst oder du backst ihn in der Form.
