Diese Zimtschnecken in vegan sind einfach, schnell und gelingsicher.&nbsp;<\/p>\n\n\n\n<p>Der Hefeteig f\u00fcr diese Himbeer-Zimtschnecken l\u00e4sst sich sehr gut im Voraus vorbereiten.&nbsp;<\/p>\n\n\n\n<p>Hast du schon mal die ber\u00fchmten Zimtschnecken aus den USA gegessen? Wie du siehst, brauchst du nicht wirklich au\u00dfergew\u00f6hnliche Zutaten f\u00fcr diese leckeren veganen Zimtschnecken mit Himbeer-F\u00fcllung. Cashewmus. Samenmuse gehen auch, wie zum Beispiel ein muss aus Sonnenblumenkerne.&nbsp;<\/p>\n\n\n\n<p>Wenn du dein Rezept nicht \u00f6lfrei zubereiten m\u00f6chtest, dann kannst du hier auch auf ein \u00d6l wie z.B. das von Kokos\u00f6l zur\u00fcckgreifen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Vanilleextrakt<\/h3>\n\n\n\n<p>Du hast keinen Vanilleextrakt zu Hause, aber du hast Vanilleschoten zu Hause, dann kannst du auch ein Viertel der Vanilleschote hineingeben. Dazu verwende, das Mark der Vanilleschote.\u00a0<\/p>\n\n\n\n<div class=\"wp-block-mv-video\"><div class=\"mv-video-target mv-video-id-xxqgqauupdi2vpxxxemt\" data-video-id=\"xxqgqauupdi2vpxxxemt\" data-ratio=\"\" data-volume=\"70\"><\/div><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Dattelpaste-Ersatz<\/h3>\n\n\n\n<p>Wenn du keine Datteln zur Hand hast, kannst du nat\u00fcrlich auf dein bevorzugtes S\u00fc\u00dfungsmittel zur\u00fcckgreifen. Z.B. Kokosbl\u00fctenzucker oder auch Ahornsirup und dergleichen. Hier kannst du wirklich dein S\u00fc\u00dfungsmittel verwenden, was du am liebsten verwendest.&nbsp;<\/p>\n\n\n\n<p>Ich verwende Dattelpaste, da diese whole food plant based ist und nicht verarbeitet ist. Dazu mixe ich Datteln mit etwas Wasser bis eine cremige Konsistenz entsteht. L\u00e4sst sich auch super in gr\u00f6\u00dferen Mengen zubereiten und dann Essl\u00f6ffelweise einfrieren.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Dinkelmehl-Ersatz<\/h3>\n\n\n\n<p>Du musst hier kein Dinkelmehl verwenden, du kannst auch auf normales Haushaltsmehl verwenden. Oder auch Vollkornmehl. Ich backe diese gerne mit Vollkornmehl. Wem Vollkornmehl zu intensiv schmeckt, kann auch halb Haushaltsmehl und halb Vollkornmehl verwenden.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Aquafaba-Ersatz<\/h3>\n\n\n\n<p>Wer keine Kichererbsen zu Hause hat, kann dieses auch weglassen. Wobei ich sagen muss, ich finde der Hefeteig wird noch weicher und fluffiger mit dem Aquafaba drin.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Getrocknete Datteln<\/h3>\n\n\n\n<p>Die Datteln, dienen in der F\u00fcllung als S\u00fc\u00dfungsmittel, du kannst auch auf etwas anderes zur\u00fcckgreifen. Z.B. Brombeeren zu Hause hast, kannst du diese nat\u00fcrlich auf verwenden. Hier kannst du Beeren nach Belieben verwenden. Du kannst auch einen Beeren-Mix verwenden.&nbsp;<\/p>\n\n\n\n<p>Diese veganen Himbeer-Schnecken habe ich schon mit Brombeeren oder auch Johannisbeeren (wer es sauer mag) zubereitet. Ich kann mir auch gut Stachelbeeren vorstellen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Cashew-Ersatz<\/h3>\n\n\n\n<p>Wem Cashews zu teuer sind oder einfach aus anderen Gr\u00fcnden nicht verwenden m\u00f6chte, dem kann ich empfehlen, die gleiche Menge an Sonnenblumenkerne zu verwenden. Diese werden super cremig und sind eine budget-freundliche Ersatzm\u00f6glichkeit.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Wei\u00dfe Bohnen-Ersatz<\/h3>\n\n\n\n<p>Die wei\u00dfen Bohnen helfen, den veganen Guss noch cremiger und geschmeidiger zu machen. Wenn du keine H\u00fclsenfr\u00fcchte essen kannst, kannst du hier auch auf Kokoscreme zur\u00fcckgreifen. Bei Kokoscreme handelt es sich um den festen Teil der Kokosmilch. Glutenfrei, Nussfrei, Paleo, Keto? Dann schau unbedingt mal hier, nach Variationen, die f\u00fcr dich in Frage kommen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Glutenfrei Vegan<\/h3>\n\n\n\n<p>Anstelle von normalen Weizen- oder Dinkelmehl kannst du auf glutenfreies Mehl zur\u00fcckgreifen. Hier verwende ein glutenfreies Backmehl. Du kannst auch einen Teil Mandelmehl verwenden.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Nussfrei<\/h3>\n\n\n\n<p>Bei diesen Veganen Himbeer-Schnecken verwenden wir Mandelmus und Cashews.&nbsp;<\/p>\n\n\n\n<p>Um die Kaffeest\u00fcckchen nussfrei zuzubereiten, verwende anstelle von Mandelmus ein Samenmus, z.B. Sonnenblumenkernmus. Du kannst auch anstelle von Cashews Sonnenblumenkerne verwenden.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">&nbsp;Keto Vegan<\/h3>\n\n\n\n<p>Du kannst dich Keto auch ohne tierische Produkte ern\u00e4hren. Hier empfehle ich dir, das Mehl durch Mandelmehl zu ersetzen. Dazu nehme von dem Mandelmehl 7 Essl\u00f6ffel und ersetze diese mit Tapiokast\u00e4rke. Anstelle von Hefe, verwende 1 TL Backpulver. Die Fl\u00fcssigkeit gebe langsam&nbsp; hinzu, bis du einen Teig bekommst, den du ausrollen kannst. Vermutlich brauchst du weniger Fl\u00fcssigkeit.&nbsp;<\/p>\n\n\n\n<p>Lasse das Aquafaba weg. Und verwende z.B. ein Leinsamen-Ei. (1 Essl\u00f6ffel gemahlene Leinsamen und 4 Essl\u00f6ffel Wasser).&nbsp;<\/p>\n\n\n\n<p>Als S\u00fc\u00dfungsmittel verwende dein Favorisierte Zuckeralternative.&nbsp;<\/p>\n\n\n\n<p>Anstelle der wei\u00dfen Bohnen empfehle ich dir Kokoscreme (der Feste Teil der Kokosmilch) zu verwenden.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Paleo Vegan<\/h3>\n\n\n\n<p>F\u00fcr eine Paleo Variante der veganen Himbeer-Zimt-Schnecken, kannst du anstelle von Mehl auf Mandelmehl zur\u00fcckgreifen. Hier verfahre wie bei der Keto Variante mit dem Mandelmehl.<\/p>\n\n\n\n<h2 id=\"zubereitung\"   class=\"wp-block-heading\">Zubereitung<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Teig&nbsp;<\/h3>\n\n\n\n<p>Fange damit die Hefe mit dem Wasser kurz stehen zu lassen.&nbsp;<\/p>\n\n\n\n<p>Jetzt verr\u00fchre das Mandelmus mit etwas von Sprudel bis es cremig ist. Nun wiege alle Zutaten ab und gebe diese in eine R\u00fchrsch\u00fcssel. Gebe das Hefewasser dazu und knete den Teig ca. f\u00fcr 8 Minuten. Wenn dir der Teig zu trocken erscheint, gebe noch etwas Wasser hinzu. Es ist wichtig, dass der Teig leicht klebrig ist. Du ihn aber relativ einfach vom Sch\u00fcsselrand l\u00f6sen kannst.&nbsp;<\/p>\n\n\n\n<p>Lasse den Teig gehen f\u00fcr ca. 1 Stunde. Jetzt schlage den Teig kurz, so dass die Luft einweichen kann und lasse den Teig nochmal f\u00fcr eine Stunde bei Zimmertemperatur stehen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">F\u00fcllung<\/h3>\n\n\n\n<p>In der Zwischenzeit bereite die Himbeerf\u00fcllung vor. Dazu die Himbeeren auftauen.<\/p>\n\n\n\n<p>Die Himbeeren mit der Speisest\u00e4rke, Vanilleextrakt und der Zitrone verr\u00fchren.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Guss<\/h3>\n\n\n\n<p>F\u00fcr das Guss alle Zutaten in einen Food Prozessor oder Hochleistungsmixer geben und zu einer cremigen Masse vermixen. Es sollten keine St\u00fcckchen mehr da sein. Schmecke den Guss ab, ob dieser dir s\u00fc\u00df genug ist. Gegebenenfalls gebe noch etwas Ahornsirup dazu. Stelle es in den K\u00fchlschrank.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Zusammenstellen<\/h3>\n\n\n\n<p>Heize den Backofen auf 175\u00b0C vor.&nbsp;<\/p>\n\n\n\n<p>Fange damit an den Teig rechteckig auszurollen. Jetzt verteile darauf, dass Mandelmus. Gebe darauf die gehackten Datteln. Und verteile die Himbeeren. Jetzt rolle das Rechteck von der Langen Seite auf und schneide ca. 2,5 cm dicke Schnecken hab. Nun lege diese mit etwas Abstand in eine Auflaufform, diese lege ich mit Backpapier aus.&nbsp; Lasse nun die Schnecken nochmal f\u00fcr ca. 30-45 min gehen. Wichtig, dass diese merklich aufgehen. Nun backe die Schnecken f\u00fcr ca. 25 min.&nbsp;<\/p>\n\n\n\n<p>Die Himbeer-Schnecken m\u00fcssen nicht braun werden, es reicht, wenn sie durchgebacken sind. So bleiben die Schnecken weich und fluffig.&nbsp;<\/p>\n\n\n\n<p>Lasse die Schnecken etwas abk\u00fchlen. Und serviere sie leicht warm mit dem Guss.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Im Voraus zubereiten<\/h3>\n\n\n\n<p>Du kannst den Hefeteig schon im Voraus zubereiten. Dazu wie oben beschrieben verfahren. Und nach einer Stunde Gehzeit abgedeckt in den K\u00fchlschrank stellen. Am n\u00e4chsten Tag 2 Stunden bevor du die Schnecken backen m\u00f6chtest, aus dem K\u00fchlschrank nehmen. Dazu einfach die Schnecken in einem verschlossenen Beh\u00e4lter legen.&nbsp;<\/p>\n\n\n\n<p>Kurz vor dem Servieren, die Schnecken kurz im&nbsp; Backofen oder in der Mikrowelle erw\u00e4rmen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Wie einfrieren?&nbsp;<\/h3>\n\n\n\n<p>Die veganen Himbeer-Zimt-Schnecken lassen sich auch prima einfrieren. Dazu einfach die Schnecken in einen Beh\u00e4lter portionsweise geben. Dort halten sie sich f\u00fcr ca. 3 Monate.&nbsp;<\/p>\n\n\n\n<p>Hier empfehle ich dir, die Schnecken, den Abend vorher herauszuholen und im K\u00fchlschrank auftauen lassen.<\/p>\n\n\n\n<p><br>Dann erw\u00e4rme die Zimtschnecken mit Himbeerf\u00fcllung im Backofen oder in der Mikrowelle.&nbsp;<\/p>\n\n\n\n<h2 id=\"tipps\"   class=\"wp-block-heading\">Tipps<\/h2>\n\n\n\n<p>Es ist wichtig, dass du den Teig lange knetest, so wird der Hefeteig sch\u00f6n geschmeidig. Das Gluten entwickelt sich und der Teig wird elastisch. Das ist ma\u00dfgeblich, damit der Teig sch\u00f6n aufgeht.&nbsp;<\/p>\n\n\n\n<p>Es kann messy werden. Wenn du die Teigrolle in Schnecken schneidest, kann es sein, dass dir die Himbeerf\u00fcllung etwas rausl\u00e4uft. Wenn du m\u00f6chtest, kannst du auch die Himbeeren gefroren lassen und dann verfahren, so sind sie fest und laufen nicht raus.&nbsp;<\/p>\n\n\n\n<p>Es kann nur sein, dass du die Himbeeren nicht so sch\u00f6n verteilt bekommst beim Backen.&nbsp;<\/p>\n\n\n\n<p>Ich empfehle dir, den Guss erst kurz vor dem Servieren dr\u00fcber zugeben.
