Die genaue Menge findest du wie immer unten in der Rezeptkarte.<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Vollkornmehl<\/li><li>Gemahlene Mandeln (Mandelmehl)<\/li><li>Dattelpaste oder Dattelzucker<\/li><li>Mandelmus<\/li><li>Backpulver<\/li><li>Aprikosen<\/li><li>Gemahlene Haseln\u00fcsse<\/li><li>Wasser<\/li><li>Mandelmus<\/li><li>Ahornsirup oder Dattelpaste<\/li><li>Dunkle Schokolade (mindestens 70%)<\/li><\/ul>\n\n\n\n<h2 id=\"substitutionen\"   class=\"wp-block-heading\" >Substitutionen<\/h2>\n\n\n\n<p>Schauen wir uns nun an, welche Zutaten du austauschen kannst, um trotzdem leckere vegane Nussecken zu zaubern.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-vollkornmehl\">Vollkornmehl<\/h3>\n\n\n\n<p>Statt Weizenvollkornmehl kannst auch normales Allzweckmehl, Dinkelmehl oder eine glutenfreie Mehlmischung verwenden. <\/p>\n\n\n\n<p>Ich wechsle gerne zwischen Vollkorn- und Dinkelmehl.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-mandelmehl\">Mandelmehl<\/h3>\n\n\n\n<p>Damit wir ohne Butter oder \u00d6l einen m\u00fcrben M\u00fcrbeteig herstellen k\u00f6nnen, brauchen wir eine Fettquelle aus vollwertigen Lebensmitteln, daher das Mandelmehl.&nbsp;<\/p>\n\n\n\n<p>Wer jetzt keine Mandeln verwenden m\u00f6chte, kann hier auch gemahlene Sonnenblumenkerne oder K\u00fcrbiskerne verwenden. <\/p>\n\n\n\n<p>Beide Samen-Favoriten haben einen sch\u00f6nen Fettgehalt, um einen sch\u00f6nen m\u00fcrbigen M\u00fcrbeteig zu machen.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-dattelpaste-oder-dattelzucker\">Dattelpaste oder Dattelzucker<\/h3>\n\n\n\n<p>Hier kannst du nat\u00fcrlich nach Belieben S\u00fc\u00dfungsmittel verwenden. Ich bevorzuge es gegen\u00fcber wei\u00dfem Haushaltszucker<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-mandelbutter\">Mandelbutter<\/h3>\n\n\n\n<p>F\u00fcr diese einfachen Ecken verwende ich am liebsten Mandelmus oder Cashewmus. <\/p>\n\n\n\n<p>Du kannst aber auch Sonnenblumenkern- oder K\u00fcrbiskernmus verwenden, um ohne Kokos\u00f6l einen buttrigen M\u00fcrbeteig zu kreieren.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-aprikosen\">Aprikosen<\/h3>\n\n\n\n<p>Statt s\u00fc\u00dfer Marillenmarmelade mit viel Zucker verwende ich gerne Dosen-Aprikosen ohne Zuckerzusatz und p\u00fcriere sie. <\/p>\n\n\n\n<p>Wer mag, kann auch Marmelade verwenden. Oder andere Fr\u00fcchte, die Sie m\u00f6gen.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-haselnussmehl\">Haselnussmehl<\/h3>\n\n\n\n<p>Du kannst die Haseln\u00fcsse auch durch Mandeln ersetzen, wobei die Haseln\u00fcsse diesen leckeren Keks ihren besonderen, traditionellen Geschmack verleihen.<\/p>\n\n\n\n<p>Ich kann mir auch gut vorstellen statt deutsche Nussecken Samenecken aus K\u00fcrbiskernen oder sogar Sonnenblumenkernen zu machen.<\/p>\n\n\n\n<p>Du kannst auch eine Nussmischung wie eine Mischung aus Haseln\u00fcssen, Macadamia, Mandeln verwenden.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" width=\"900\" height=\"600\" data-pin-url=\"https:\/\/veeatcookbake.com\/de\/vegane-nussecken-den-klassiker-veganisiert\/?tp_image_id=3534\" src=\"https:\/\/veeatcookbake.com\/wp-content\/uploads\/2018\/11\/nut-bars-german-nut-corners-nussecken-vegan-03.jpg\" alt=\"nut-bars-german-nut-corners-nussecken-vegan-04\" class=\"wp-image-3534\" srcset=\"https:\/\/veeatcookbake.com\/wp-content\/uploads\/2018\/11\/nut-bars-german-nut-corners-nussecken-vegan-03.jpg 900w, https:\/\/veeatcookbake.com\/wp-content\/uploads\/2018\/11\/nut-bars-german-nut-corners-nussecken-vegan-03-300x200.jpg 300w, https:\/\/veeatcookbake.com\/wp-content\/uploads\/2018\/11\/nut-bars-german-nut-corners-nussecken-vegan-03-768x512.jpg 768w\" sizes=\"(max-width: 900px) 100vw, 900px\" \/><\/figure>\n\n\n\n<h2 id=\"variationen\"   class=\"wp-block-heading\" >Variationen<\/h2>\n\n\n\n<p>In diesem Abschnitt zeige ich dir, wie du die Nussecken an bestimmte Ern\u00e4hrungsformen anpassen kannst.&nbsp;<\/p>\n\n\n\n<p>Erstens sind diese bereits sojafrei. Wenn du sie glutenfrei oder nussfrei machen m\u00f6chtest (ich wei\u00df, warum w\u00fcrdest du sie nussfrei machen m\u00f6chten, wenn dieses Rezept eindeutig ein Nussecken Rezept ist), kannst du folgendes tun:<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"glutenfrei\">Glutenfrei<\/h3>\n\n\n\n<p>Du kannst die Nussecken relativ einfach glutenfrei zubereiten. Verwende einfach eine glutenfreie Mehlmischung. <\/p>\n\n\n\n<p>Auch das Buchweizenmehl oder Reismehl kann ich mir hier gut vorstellen. Ich w\u00fcrde hier etwa 1-2 Essl\u00f6ffel St\u00e4rke hinzuf\u00fcgen.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"nussfrei\">Nussfrei<\/h3>\n\n\n\n<p>Ich wei\u00df, dass der Name Nussecken f\u00fcr N\u00fcsse steht. Du kannst hier aber auch eine Alternative aus Samen zubereiten. <\/p>\n\n\n\n<p>Verwende einfach deine\u00a0 Lieblingssamen, die du mahlst oder grob hackst und verwenden kannst.<\/p>\n\n\n\n<h2 id=\"zubereitung\"   class=\"wp-block-heading\" >Zubereitung<\/h2>\n\n\n\n<p>Backofen auf 175 \u00b0C vorheizen.<\/p>\n\n\n\n<p>Alle Zutaten f\u00fcr den M\u00fcrbeteig zu einem kr\u00fcmeligen Teig kneten, der die Konsistenz von Streuseln haben sollte. Diese auf ein mit Backpapier ausgelegtes Backblech streichen.<\/p>\n\n\n\n<p>Aprikosen p\u00fcrieren und den M\u00fcrbeteig d\u00fcnn mit Aprikosenmarmelade bestreichen.<\/p>\n\n\n\n<p>F\u00fcr die Nussschicht das Wasser mit dem Nussmus und dem S\u00fc\u00dfstoff verr\u00fchren, bis alles gut vermischt ist. Nun die Haseln\u00fcsse hinzuf\u00fcgen und r\u00fchren, bis alles gut vermischt ist.<\/p>\n\n\n\n<p>Die klebrigen Haseln\u00fcsse auf dem M\u00fcrbeteig verteilen.<\/p>\n\n\n\n<p>Jetzt die Nussecken im vorgeheizten Backofen ca. 20-25 Minuten backen. Mache die Zahnstocherprobe, um zu sehen, ob der Teig durchgebacken ist.<\/p>\n\n\n\n<p>Lasse die Nussecken zuerst vollst\u00e4ndig abk\u00fchlen.<\/p>\n\n\n\n<p>Schneide zuerst Quadrate und aus den Quadraten Dreiecke.<\/p>\n\n\n\n<p>Die Schokolade im Wasserbad schmelzen und die Ecken der Nussecken in die geschmolzene Schokolade tauchen. Lasse sie zuerst auf Zimmertemperatur abk\u00fchlen.<\/p>\n\n\n\n<p>Bei uns werden die Nussecken nicht \u00e4lter als 1 Woche. Sie sind zu gut, um sie nicht zu essen!<\/p>\n\n\n\n<p>Du kannst die Nussecke auch einfrieren und dann auftauen. Friere sie dazu zun\u00e4chst einzeln ein und wenn sie gefroren sind, kannst du sie zusammen einfrieren. So frieren die Ecken nicht zusammen und du kannst einzelne Nussecken herausnehmen.<\/p>\n\n\n\n<h2 id=\"tipps\"   class=\"wp-block-heading\" >Tipps<\/h2>\n\n\n\n<p>Verwende f\u00fcr Kuchen am besten ein Backblech.<\/p>\n\n\n\n<p>Du kannst eigenen gemahlenen Haseln\u00fcsse zubereiten. Gebe ganze Haseln\u00fcsse in einen Hochleistungsmixer oder eine K\u00fcchenmaschine und mische, bis du ein Mehl erh\u00e4ltst. Auf diese Weise kannst du alle Arten von gemahlenen N\u00fcssen erhalten.<\/p>\n\n\n\n<p>Du kannst den M\u00fcrbeteig entweder mit den Fingern auseinanderziehen. Oder rolle es auf Backpapier aus und legen es dann in die Pfanne.<\/p>\n\n\n\n<p>Die Nussecken lassen sich am einfachsten schneiden, wenn sie vollst\u00e4ndig abgek\u00fchlt sind. Du kannst sie auch f\u00fcr ein paar Stunden in den K\u00fchlschrank legen und dann mit einem scharfen Messer schneiden.<\/p>\n\n\n\n<p>Schneide vegane Mini-Nussecken (5 cm), die auf einer Keksplatte sehr gut aussehen, oder in 10 cm gro\u00dfe Nussecken schneiden, wie sie in deutschen B\u00e4ckereien verkauft werden, die du als Dessert zu Kaffee und Kuchen servieren kannst.<\/p>\n\n\n<div
