In vielen anderen L\u00e4ndern ist ein solches s\u00fc\u00dfes, geflochtenes Hefebrot, welches wie Kuchen gegessen wird, als Babka bekannt. Dabei entwickelte sich dieses Brot im 19. Jahrhundert in einer polnisch-j\u00fcdischen Gemeinde.&nbsp;<\/p>\n\n\n\n<p>Dabei wird ein Brioche-Teig ausgerollt und traditionell mit Schokolade gef\u00fcllt. Wir bereiten hier eine beliebte deutsche Version zu. Der dann aufgerollt wird und zu einem Zopf geflochten wird.&nbsp;<\/p>\n\n\n\n\n\n<h2 id=\"zutaten\"   class=\"wp-block-heading\">Zutaten<\/h2>\n\n\n\n<p>Schauen wir uns jetzt einmal die Zutaten an, die in diesem veganen Nusszopf stecken. Die genauen Mengenangaben findest du wie immer weiter unten in der Rezeptkarte.&nbsp;<\/p>\n\n\n\n<p>Mandelmilch&nbsp;<\/p>\n\n\n\n<p>Trockenhefe<\/p>\n\n\n\n<p>Ahornsirup&nbsp;<\/p>\n\n\n\n<p>Vollkornmehl<\/p>\n\n\n\n<p>Gluten&nbsp;<\/p>\n\n\n\n<p>Mandelmus<\/p>\n\n\n\n<p>Haselnuss<\/p>\n\n\n\n<p>Datteln<\/p>\n\n\n\n<p>Zimt<\/p>\n\n\n\n<p>Kokosbl\u00fctenzucker<\/p>\n\n\n\n<p>Tapiokast\u00e4rke<\/p>\n\n\n\n<p>Zitronensaft<\/p>\n\n\n\n<h2 id=\"substitutionen\"   class=\"wp-block-heading\">Substitutionen<\/h2>\n\n\n\n<p>Schauen wir mal an welche Zutaten sich hier austauschen lassen. Achte bitte darauf, dass du nicht zu viel ab\u00e4nderst, weil sich dann die Eigenschaft des Hefeteigs \u00e4ndert.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Mandelmilch&nbsp;<\/h3>\n\n\n\n<p>Ich nehme gerne Mandelmilch. Da diese doch eher geschmacksneutral ist. Du kannst aber auch gerne Hafermilch, Sojamilch oder Reismilch verwenden. Alle pflanzlichen Sorten werden hier funktionieren.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><br>Trockenhefe<\/h3>\n\n\n\n<p>Wenn du frische Hefe zu Hause hast, dann kannst du hier auch die frische Hefe verwenden. Dazu verwende einen halben W\u00fcrfel (21 g).&nbsp;<\/p>\n\n\n\n<p>Achte darauf, dass du die frische Hefe erst in der Mandelmilch aufl\u00f6st und ca. 5 Minuten ruhen l\u00e4sst. So aktiviert sich die Hefe.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ahornsirup&nbsp;<\/h3>\n\n\n\n<p>Ich verwende Ahornsirup in diesem Hefezopf, du kannst aber auch Dattels\u00fc\u00dfe, Dattelpaste oder auch Kokosbl\u00fctenzucker verwenden.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Vollkornmehl&nbsp;<\/h3>\n\n\n\n<p>Wie du vielleicht schon an meinen anderen Rezept gesehen hast, wie diesen Schokobr\u00f6tchen verwende ich gerne Vollkornmehl. Du kannst hier auch normales Haushaltsmehl oder Dinkelmehl verwenden. Das Vollkornmehl macht den Teig etwas fester von der Textur als wenn du normales Mehl verwenden w\u00fcrdest.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Gluten&nbsp;<\/h3>\n\n\n\n<p>Gerade bei Vollkornbackwaren hilft das Gluten den Teig lockerer zu machen. Wenn du kein Gluten hinzuf\u00fcgen m\u00f6chtest, kannst du es auch einfach weglassen. Es kann sein, dass dein Hefezopf dadurch etwas fester wird.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Mandelmus<\/h3>\n\n\n\n<p>Anstelle von Mandelmus kannst du auch zu einem anderen Nussmus wie zum Beispiel Cashewmus oder auch Samenmus aus zum Beispiel Sonnenblumenkerne greifen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Haselnuss<\/h3>\n\n\n\n<p>Den traditionellen Geschmack bekommt der Nusszopf aus Haseln\u00fcssen. Du kannst hier auch zu Mandeln oder auch anderen N\u00fcssen greifen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Kokosbl\u00fctenzucker<\/h3>\n\n\n\n<p>F\u00fcr den Zuckerguss kannst du auch anderen Kristallzucker wie Rohrohrzucker, Dattels\u00fc\u00dfe verwenden. Der Zuckerguss wird etwas br\u00e4unlicher als mit normalen Haushaltszucker. Schmeckt aber mindestens genauso gut. Das Brot wird aus glutenhaltiges Getreide hergestellt, was es nicht glutenfrei macht. Das Brot ist \u00f6lfrei, raffiniert zuckerfrei und sojafrei. Wie der Name veganer Nusszopf schon sagt, sind N\u00fcsse enthalten.&nbsp;<\/p>\n\n\n\n<p><br>Wenn du das Brot nussfrei herstellen m\u00f6chtest, empfehle ich dir folgende Variationen auszuprobieren.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Schokoladen-Babka<\/h3>\n\n\n\n<p>Hier nehme einfach eine andere F\u00fcllung. Dabei kannst du folgende Zutaten verwenden.&nbsp;<\/p>\n\n\n\n<p>400g Zartbitterschokolade&nbsp;<\/p>\n\n\n\n<p>2 EL Cashewmus oder Samenmus<\/p>\n\n\n\n<p>1 TL Vanilleextrakt&nbsp;<\/p>\n\n\n\n<p>4 EL Kakao&nbsp;<\/p>\n\n\n\n<p>1 EL Ahornsirup&nbsp;<\/p>\n\n\n\n<p>Schmelze die Schokolade im Wasserbad und r\u00fchre die restlichen Zutaten unter. Lasse es etwas abk\u00fchlen bevor du es auf den Teig streichst.&nbsp;<\/p>\n\n\n\n<p>Verfahre mit dem Rest wie in der Rezeptkarte<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Mohnzopf<\/h3>\n\n\n\n<p>F\u00fcr die F\u00fcllung verwende folgende Zutaten:&nbsp;<\/p>\n\n\n\n<p>200 ml pflanzliche Milch&nbsp;<\/p>\n\n\n\n<p>200 g gemahlener Mohn&nbsp;<\/p>\n\n\n\n<p>60 ml Ahornsirup&nbsp;<\/p>\n\n\n\n<p>2 EL Mandelmus oder Samenmus<\/p>\n\n\n\n<p>Koche dabei die vegane Milch in einem Topf auf und gebe die restlichen Zutaten hinzu. R\u00fchre st\u00e4ndig um und lasse es ca. 2-3 Minuten k\u00f6cheln. Lasse die F\u00fcllung abk\u00fchlen. Bevor du sie auf dem Teig verstreichst.&nbsp;<\/p>\n\n\n\n<p>Verfahre nun wie beim Nusszopf.&nbsp;<\/p>\n\n\n\n<h2 id=\"zubereitung\"   class=\"wp-block-heading\">Zubereitung<\/h2>\n\n\n\n<p>Gebe das Mehl, Glutenpulver (Weizenkleber) und Trockenhefe in eine R\u00fchrsch\u00fcssel von einer K\u00fcchenmaschine mit Knethaken und verr\u00fchre kurz die trockenen Zutaten. Jetzt gebe die Mandelmilch, Ahornsirup, Mandelmus hinzu und verknete das ganze f\u00fcr 20 Minuten. Das macht den Teig sch\u00f6n geschmeidig und elastisch.&nbsp;<\/p>\n\n\n\n<p>Lasse jetzt den Teig f\u00fcr 1 Stunde an einem warmen Ort gehen, der Teig sollte doppeltes Volumen erlangen. Jetzt knete den Teig nochmals f\u00fcr ca. 3 Minuten.&nbsp;<\/p>\n\n\n\n<p>W\u00e4hrend der Teig geht kannst du die Nussf\u00fcllung vorbereiten. Dazu weiche die Datteln in etwas Wasser ein. Nach ca. 20 Minuten kannst du die Datteln mit dem Haselnussmehl, Mandelmilch und Zimt in einem Food Processor zu einer homogenen Masse verarbeiten bis die Datteln klein sind.<\/p>\n\n\n\n<p>Nun rolle den Teig rechteckig aus und bestreiche den Teig mit der Nussmischung. Rolle den Teig auf und schneide ihn in 2-3 Str\u00e4nge. Nimm die Str\u00e4nge und flechte diese zu einem Zopf. Jetzt nimm eine Kastenform und lege diese mit Backpapier aus. Lege den Zopf in die Kastenform und lasse es nochmal f\u00fcr 1 Stunde gehen. Heize den Backofen auf 150\u00b0C vor. Bestreiche den Zopf mit Aquafaba oder Mandelmilch und backe ihn f\u00fcr ca. 40 Minuten.<\/p>\n\n\n\n<p>Hebe den Zopf aus der Form und lasse ihn auf einem Kuchengitter ausk\u00fchlen. Nehme ihn eine Stunde vor dem Backen aus dem K\u00fchlschrank.&nbsp;<\/p>\n\n\n\n<h2 id=\"aufbewahrung\"   class=\"wp-block-heading\">Aufbewahrung<\/h2>\n\n\n\n<p>Am besten schmeckt Brot wie der Hefezopf frisch gebacken am selben Tag. Du kannst ihn aber auch aufheben.&nbsp;<\/p>\n\n\n\n<p>Du kannst ihn aber auch in einem luftdichten Beh\u00e4lter f\u00fcr ca. 2-3 Tage aufbewahren. Frisch gebackene Ware wird schneller trocken als die gekaufte.&nbsp;<\/p>\n\n\n\n<p>Wenn du Reste hast empfehle ich dir diese einzufrieren.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-wie-einfrieren\">Wie einfrieren?<\/h3>\n\n\n\n<p>Der Nusszopf kannst du sehr gut einfrieren. Das ist viel genauer und wird dir dabei helfen, dass der Teig genauso wird wie bei mir.&nbsp;<\/p>\n\n\n\n<p>Lasse den Nusszopf erst komplett abk\u00fchlen bevor du ihn anschneidest.
