Vor meiner veganen Zeit, habe ich es relativ oft gegessen. Und wie du sehen kannst, kann man es gesund ohne ges\u00e4ttigte Fette und Cholesterin herstellen.&nbsp;<\/p>\n\n\n\n<p>Und glaube mit geschmacklich kommt es an das Original ran, wenn es nicht sogar besser schmeckt. Ich liebe dieses vegane Moussaka.&nbsp;<\/p>\n\n\n\n<p>Das nicht vegane Moussaka wird mit Lamm oder auch Rind zubereitet.. F\u00fcr die vegane Moussaka sauce habe ich mich f\u00fcr Pilze, Pekann\u00fcsse, Linsen, Karotte und sellerie entschieden. <\/p>\n\n\n\n<p>So bekommen wir nicht nur eine authentische Sauce. Durch die Zutaten ist diese So\u00dfe vollgepackt mit wertvollen N\u00e4hrstoffen.&nbsp;<\/p>\n\n\n\n<p>Dieses moussaka ist nicht nur pflanzlich. Es ist auch glutenfrei, sojafrei und l\u00e4sst sich ganz einfach nussfrei zubereiten.&nbsp;<\/p>\n\n\n\n<p>Ich liebe Aufl\u00e4ufe wie Lasagne. Kartoffel Auflauf und dieser griechische Auflauf schmeckt einfach fantastisch. Dieser Auberginen Auflauf \u00e4hnelt der einer Lasagne. Es wird geschichtet und dann mit einer Bechamel Sauce bedeckt.&nbsp;<\/p>\n\n\n\n<p>Allerdings enth\u00e4lt Moussaka keine Lasagne-Nudeln sondern Auberginen und Kartoffeln.&nbsp;<\/p>\n\n\n\n<h2 id=\"zutaten\"   class=\"wp-block-heading\" >Zutaten<\/h2>\n\n\n\n<p>Nachdem ich schon ein paar der Zutaten genannt habe, m\u00f6chte ich dir erst einmal einen \u00dcberblick dar\u00fcber geben, was nun in dem ganzen Moussaka enthalten ist. Wobei in der traditionellen Moussaka findest du Kartoffeln.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-pekann-sse\">Pekann\u00fcsse<\/h3>\n\n\n\n<p>Die Pekann\u00fcsse lassen sich durch Waln\u00fcsse ersetzen. Hier kannst du es zu gleichen Mengen ersetzen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-pilze\">Pilze&nbsp;<\/h3>\n\n\n\n<p>Wenn du keine Pilze magst, kannst du hier auch auf Sojagranulat oder Bulgur zur\u00fcckgreifen. Ich kann mir auch vorstellen, dass Gr\u00fcnkern sehr gut damit schmeckt.&nbsp;<\/p>\n\n\n\n<p>Die Kochzeit variiert jedoch, wenn du Getreide verwendest.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-rotweinessig\">Rotweinessig<\/h3>\n\n\n\n<p>Den Rotweinessig kannst du auch durch Balsamico Essig oder auch Apfelessig ersetzen. Ich finde allerdings das der Rotweinessig eine besondere Note dem veganen Moussaka verleiht.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-cashewkerne\">Cashewkerne<\/h3>\n\n\n\n<p>Wenn du jetzt keine Cashewkerne benutzen m\u00f6chtest, dann kannst du auch Sonnenblumenkerne verwenden. <\/p>\n\n\n\n<p>Wobei es hier sein kann, dass die Bechamelsauce nicht ganz so cremig wird. Sonnenblumenkerne verf\u00e4rben gerne mal die So\u00dfen etwas gr\u00e4ulich, wenn dir das nichts ausmacht, dann kannst du diese verwenden anstatt die Cashews.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-maisst-rke\">Maisst\u00e4rke<\/h3>\n\n\n\n<p>Maisst\u00e4rke dickt die Bechamelso\u00dfe sch\u00f6n ein. Was wir bei dem Moussaka wollen. Dann verwende anstelle von Pekans Sonnenblumenkerne oder K\u00fcrbiskerne. <\/p>\n\n\n\n<p>F\u00fcr die Bechamelso\u00dfe verwende Sojamilch oder Reismilch. Dazu entferne den Stiel der Aubergine und schneide ca. 1 cm dicke Scheiben der L\u00e4nge nach. <\/p>\n\n\n\n<p>Nun Salze leicht die Aubergine und f\u00fcr ca. 30 min in einen Sieb legen. So wird die Aubergine entw\u00e4ssert und das Moussaka wird nicht zu w\u00e4ssrig. Und heize den Backofen auf 350\u00b0C vor.&nbsp;<\/p>\n\n\n\n<p>In der Zwischenzeit schneide die Kartoffeln in d\u00fcnne Scheiben. Und lege sie auf ein mit Backpapier ausgelegtes Backblech.&nbsp;<\/p>\n\n\n\n<p>Jetzt sp\u00fcle die Auberginen mit Wasser ab und dr\u00fccke die Restliche Fl\u00fcssigkeit aus.&nbsp;<\/p>\n\n\n\n<p>Nehme ein Tuch und tupfe sie kurz trocken. Jetzt gebe die Auberginen auf ein Backblech. Und backe die Auberginen mit den Kartoffeln f\u00fcr ca. 20 Minuten, achte darauf, dass die Kartoffeln nicht zu dunkel werden.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-fleischsauce\">\u201cFleischsauce\u201c<\/h3>\n\n\n\n<p>W\u00e4hrend die Auberginen und Kartoffeln backen, bereiten wir die Sauce zu. Dazu nehmen wir einen Food Processor und geben geviertelte Pilze, Pekann\u00fcsse, Karotten, Sellerie, Zwiebel und Knoblauch hinein und verarbeiten es mit der Pulse Funktion bis die Masse fein gehackt ist.<\/p>\n\n\n\n<p> Achte darauf ,dass es nicht zu lange mixt, sonst hast du eine Paste und keine gehackte Masse.&nbsp;<\/p>\n\n\n\n<p>Nun nehme eine gro\u00dfe Pfanne und stelle den Herd auf mittlere eher hohe Hitze. Gebe das Gem\u00fcse dazu und brate es ordentlich an. Gebe immer mal wieder ein Schluck Wasser hinzu, damit die nichts anbrennt.&nbsp;<\/p>\n\n\n\n<p>Jetzt gebe die Linsen, Tomaten und Tomatenmark hinzu und verr\u00fchre es gut. Gebe eine Prise Zimt (opt), Oregano, Thymian, 2 Lorbeerbl\u00e4tter, Paprika und Pfeffer hinzu und lasse es auf niedriger Stufe f\u00fcr ca. 20-30 Minuten k\u00f6cheln. Gebe jetzt den Rotweinessig hinzu und schmecke die So\u00dfe ab.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-bechamelsauce-1\">Bechamelsauce&nbsp;<\/h3>\n\n\n\n<p>F\u00fcr die Bechamelsauce gebe alle Zutaten in einen Hochleistungsmixer und mixe solange bis eine cremige Masse entsteht.&nbsp; <\/p>\n\n\n\n<p>Nun gebe alles in einen Topf und erhitze es bei mittlerer Hitze unter st\u00e4ndigem R\u00fchren. Die So\u00dfe dickt jetzt ein. Es sollte eine dicke Creme werden. Schmecke die So\u00dfe nochmal kurz ab. Jetzt nehme einen 1 EL von der Bechamelso\u00dfe und r\u00fchre es in die \u201cFleischsauce\u201d.&nbsp;<\/p>\n\n\n\n<p>Stelle die So\u00dfe zur Seite.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-zusammenstellung\">&nbsp;Zusammenstellung<\/h3>\n\n\n\n<p>Heize den Backofen auf ca. 200\u00b0C vor. Verwende eine ca. 20x30 cm gro\u00dfe Auflaufform. Gebe etwas von der So\u00dfe auf den Boden der Pfanne. <\/p>\n\n\n\n<p>Jetzt schichte die Kartoffeln und dann lege die H\u00e4lfte der Aubergine darauf. Jetzt gebe die gesamte \u201cFleischsauce\u201d auf die Auberginen und verteile diese gleichm\u00e4\u00dfig. <\/p>\n\n\n\n<p>Nun gebe die restlichen Auberginen auf die So\u00dfe. Jetzt sch\u00fctte die gesamte B\u00e9chamelso\u00dfe dar\u00fcber und verstreiche sie gleichm\u00e4\u00dfig.&nbsp;<\/p>\n\n\n\n<p>Backe jetzt das vegane Moussaka f\u00fcr ca. 60 Minuten bis es oben drauf goldbraun wird.&nbsp;&nbsp;<\/p>\n\n\n\n<p>Jetzt lasse das Moussaka abk\u00fchlen, bis es sich nur noch warm anf\u00fchlt. Dies ist wichtig! Dann fange es erst an in St\u00fccke zu schneiden. Kein Problem. Reste lassen sich prima aufbewahren.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-wie-kalt-stellen\">Wie kalt stellen?&nbsp;<\/h3>\n\n\n\n<p>Reste kannst du im K\u00fchlschrank aufbewahren. Dort halten sie sich in einem verschlossenen Beh\u00e4lter ca. 3-4 Tage.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-wie-einfrieren\">Wie einfrieren?<\/h3>\n\n\n\n<p>Ich kann mir sehr gut vorstellen, dass du es einfrieren kannst. Dazu einfach in einen verschlossenen Beh\u00e4lter lassen. <\/p>\n\n\n\n<p>Wenn du es Erw\u00e4rmen m\u00f6chtest, am besten einen Abend vorher in den K\u00fchlschrank stellen und dann im Backofen backen. <\/p>\n\n\n\n<p>Hier empfehle ich dir, solange zu Backen bis die Mitte gut hei\u00df ist.&nbsp;<\/p>\n\n\n\n<h2 id=\"tipps\"   class=\"wp-block-heading\" >Tipps<\/h2>\n\n\n\n<p>Die Sauce wird sehr dickfl\u00fcssig und \u00e4hnelt schon eher einem Brei. So wird die So\u00dfe nicht zu fl\u00fcssig beim Backen. <\/p>\n\n\n\n<p>Mache nicht mehr Fl\u00fcssigkeit daran, sonst l\u00e4uft dir die So\u00dfe weg beim Anschneiden.&nbsp;<\/p>\n\n\n\n<p>Schmecke die So\u00dfe kr\u00e4ftig ab, daher verwende ich Thymian, Oregano, Zimt.&nbsp;<\/p>\n\n\n\n<p>Die Bechamelsauce sollte sehr dickfl\u00fcssig sein. Wenn sie dir zu d\u00fcnnfl\u00fcssig erscheint, r\u00fchre noch etwas St\u00e4rke ein. <\/p>\n\n\n\n<p>Dabei r\u00fchre die St\u00e4rke erst in etwas Mandelmilch ein und dann r\u00fchre sie langsam in die Bechamelsauce ein.
