Ca. 2 Stunden in der du in der Gehzeit dich anderen Dingen widmen kannst. Sogar aus Vollkornmehl kann man ein tolles Brot backen, das nicht zu fest in der Krumme ist, sondern locker wie wir es vom B\u00e4cker kennen.&nbsp;<\/p>\n\n\n\n<p>Mit dem Zusatz von Sonnenblumenkernen, K\u00fcrbiskerne und Leinsamen, wird dieses \u00f6lfreie Vollkornbrot mit Dinkel noch n\u00e4hrstoffreicher.&nbsp;<\/p>\n\n\n\n<div class=\"wp-block-mv-video\"><div class=\"mv-video-target mv-video-id-sg2kivwesvdxcq00o8kp\" data-video-id=\"sg2kivwesvdxcq00o8kp\" data-ratio=\"16:9\" data-volume=\"70\"><\/div><\/div>\n\n\n\n<p>Hast du schon mal Brot gebacken, und der erste Anschnitt des Brotes hebt eine solche Spannung hervor, und wenn du dann siehst, dass das Brot was geworden ist, bist du einfach \u00fcbergl\u00fccklich und k\u00f6nntest im Dreieck springen? So geht es mir oft.&nbsp;<\/p>\n\n\n\n<p>Und ganz zu schweigen von dem Geruch von frisch gebackenem Brot aus dem Ofen. Ein Kastenbrot oder auch Sandwichbrot, dass wir aus Dinkelmehl&nbsp; backen.&nbsp;<\/p>\n\n\n\n<p>Neben meinem Hafer-Samen-Weizen-Brot und meinem glutenfreien Buchweizenbrot geh\u00f6rt dieses Brot zu einem meiner go-to Brote, die ich w\u00f6chentliche backe.&nbsp;<\/p>\n\n\n\n<p>Gerade f\u00fcr ein schnelles Lunch bietet sich ein Sandwich vollgepackt mit guten Dingen an.&nbsp;<\/p>\n\n\n\n<p>Selbstgemachtes Brot ist gar nicht so kompliziert wie du es vielleicht denkst, und ich m\u00f6chte dir hier einfach zeigen, dass man ohne Zusatzstoffe und Triebsmittel (au\u00dfer Hefe) Brote backen kann. Im Video siehst du Schritt f\u00fcr Schritt wie ich das Brot zubereite.&nbsp;<\/p>\n\n\n\n<p>F\u00fcr Brote musst du nicht zu Milch, Molke, Eier, \u00d6le und dergleichen zur\u00fcckgreifen. Im Grunde brauchst du f\u00fcr ein gutes Brot nur Mehl, Salz, Hefe und Wasser und ich gebe noch gerne Samen hinzu. Ich liebe gute K\u00f6rnerbrote.&nbsp;<\/p>\n\n\n\n<p>Bei meinen Broten empfehle ich dir eine Waage zu verwenden um die genauen Mengen zu bestimmen. Ich gebe dir auch die Tassenangaben an. Dinkel und Weizen sind sehr \u00e4hnlich im N\u00e4hrstoffgehalt. Der Ausschlaggebende Unterschied ist, dass Dinkel weniger Gluten enth\u00e4lt als Weizen. <\/p>\n\n\n\n<p>Das Weizengluten ist st\u00e4rker und elastischer. Daher werden Dinkelbrote, nie so hochgehen wie Weizenbrote.&nbsp;<\/p>\n\n\n\n<p>Es wird auch gesagt, dass Menschen mit einer Weizenunvertr\u00e4glichkeit oft Dinkel tolerieren k\u00f6nnen. Hier aber immer wieder medizinischen Rat einholen. Ich bin kein Fachmann daf\u00fcr.&nbsp;<\/p>\n\n\n\n<p>Du kannst Dinkel und Weizen 1:1 ersetzen. Wenn du das machst, gebe immer langsam die Fl\u00fcssigkeitsmenge hinzu. Eventuell musst du etwas mehr Wasser hinzuf\u00fcgen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-k-rner-und-samen\">K\u00f6rner und Samen<\/h3>\n\n\n\n<p>Du kannst nat\u00fcrlich die K\u00f6rner und Samen untereinander austauschen. Zum Beispiel nur Sonnenblumenkerne verwenden. <\/p>\n\n\n\n<p>Du kannst auch N\u00fcsse hinzuf\u00fcgen, Haseln\u00fcsse, Mandeln oder auch Waln\u00fcsse.&nbsp;<\/p>\n\n\n\n<p>Variiere hier und du bekommst immer wieder ein neues Brot.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-hefe\">Hefe<\/h3>\n\n\n\n<p>Ich verwende trockene Hefe in dem Rezept. Aber da es sich ja um ein Dinkelbrot handelt, habe ich es bisher noch nicht probiert.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-sojafrei\">Sojafrei&nbsp;<\/h3>\n\n\n\n<p>Bei dem Brot verwenden wir keine sojahaltigen Lebensmittel und ist daher sojafrei.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-nussfrei\">Nussfrei<\/h3>\n\n\n\n<p>F\u00fcr das Dinkelvollkornbrot verwenden wir nur Samen und K\u00f6rner und es handelt sich daher um ein nussfreies Dinkelvollkornbrot.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-salzfrei\">Salzfrei<\/h3>\n\n\n\n<p>Du kannst entweder weniger Salz verwenden oder das Salz komplett weglassen und daf\u00fcr 1-2 TL mehr Apfelessig hinzugeben. Verr\u00fchre es kurz bis die Hefe mit dem Mehl vermengt ist.&nbsp;<\/p>\n\n\n\n<p>Gebe das Wasser hinzu und verknete den Teig auf niedriger Stufe f\u00fcr ca. 4 Minuten.&nbsp;<\/p>\n\n\n\n<p>Jetzt gebe das Salz und den Apfelessig hinzu und knete es f\u00fcr weitere 2 Minuten.&nbsp;<\/p>\n\n\n\n<p>Streue etwas Mehl \u00fcber den Teig und decke es mit nem Tuch ab. Lasse es f\u00fcr 1 Stunde an einem warmen Ort gehen.&nbsp;<\/p>\n\n\n\n<p>Der Teig sollte jetzt doppeltes Volumen haben. Nehme Backpapier und lege damit eine Kastenform aus. Gebe ein paar Samen auf den Boden der Kastenform. Knete kurz den Teig und gebe diesen in die Kastenform. <\/p>\n\n\n\n<p>Lasse den Teig f\u00fcr eine weitere Stunde gehen. Heize den Backofen auf 220\u00b0 C vor. Bestreue das Brot mit ein paar mehr Samen und stelle es in den Ofen. Stelle den Ofen auf 200 \u00b0C ein und backe es f\u00fcr 45-60 Minuten.&nbsp;<\/p>\n\n\n\n<p>Lasse es komplett ausk\u00fchlen bevor du es anschneidest.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-im-voraus-zubereiten\">Im Voraus zubereiten<\/h3>\n\n\n\n<p>Ich backe das Brot meist im Voraus und friere es ein. Dort h\u00e4lt es sich ca. 4 Tage. Es wird etwas trocken desto l\u00e4nger du es aufbewahrst. <\/p>\n\n\n\n<p>Ich toaste es am Ende gerne.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-wie-einfrieren\">Wie einfrieren?&nbsp;<\/h3>\n\n\n\n<p>Du kannst einzelne Scheiben einfrieren, dazu lege einfach ein St\u00fcck Backpapier zwischen die Scheiben und friere es ein. So kannst du immer so viele Scheiben herausnehmen wie du brauchst. <\/p>\n\n\n\n<p>Ich schneide das Brot in der Regel in die H\u00e4lfte und friere die H\u00e4lften ein. Wir essen meist innerhalb von 2-3 Tagen ein halbes Brot.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-wie-auftauen\">Wie auftauen?<\/h3>\n\n\n\n<p>Einfach den Tag vorher das Brot herausnehmen und auftauen lassen.
