F\u00fcge eine grob gehackte Karotte, 2 Stangensellerie, 2 Handvoll gehackte Pekann\u00fcsse hinzu und verwende die Pulse-Funktion, bis sie fein gehackt sind. Sie sollten nicht zu klein wie ein Brei oder zu grob sein.<\/p>\n\n\n\n<p>Das Gem\u00fcse in einem gro\u00dfen Topf glasig d\u00fcnsten. Immer etwas Wasser hinzugeben, damit sie nicht am Boden kleben bleiben.<\/p>\n\n\n\n<p>F\u00fcge die \u00bd Tasse rote Linsen, 2 Dosen (1600 ml) passierte Tomaten, \u00bd Tasse Gem\u00fcsebr\u00fche und 4 Essl\u00f6ffel Tomatenmark hinzu. R\u00fchre, bis alles gut vermischt ist.<\/p>\n\n\n\n<p>Bei mittlerer Hitze etwa 10 Minuten k\u00f6cheln lassen. Wenn die Linsen weich sind, f\u00fcge eine halbe Tasse Mandelmilch und 2 Essl\u00f6ffel Balsamico-Essig hinzu. R\u00fchre, bis alles gut vermischt ist, und mit Meersalz und schwarzem Pfeffer abschmecken.<\/p>\n\n\n\n<p><strong>Hinweis<\/strong>: Ich empfehle dir, die Karotten und den Sellerie mit den Pilzen zu schneiden. Ich finde, die Pilze verleihen unserem veganen Bolognese-Rezept einen tollen Umami-Geschmack und eine fleischige Textur. Verwende Cremini-Pilze oder wei\u00dfe Champignons.<\/li><li><strong>Linsen:<\/strong> Anstelle von Linsen kannst du mehr Pilze, Karotten und Sellerie verwenden. Anstelle von roten Linsen kannst du auch gr\u00fcne Linsen verwenden. Diese f\u00fcgen auch pflanzliches Protein hinzu.<\/li><li><strong>Tomatenpassata<\/strong>: Du kannst stattdessen auch Tomatenp\u00fcree verwenden.<\/li><li><strong>Pekann\u00fcsse<\/strong>: Wenn du keine Pekann\u00fcsse magst oder keine zur Hand hast, kannst du auch gehackte Waln\u00fcsse, Sonnenblumenkerne oder K\u00fcrbiskerne verwenden.<\/li><li><strong>Balsamico-Essig:<\/strong> Wenn du keinen Balsamico-Essig hinzuf\u00fcgen m\u00f6chtest, kannst du auch 60 ml Rotwein oder Wei\u00dfwein hinzuf\u00fcgen. Diese dann nach dem Anbraten zum Abl\u00f6schen dazugeben.<\/li><li><strong>Mandelmilch:<\/strong> F\u00fcr dieses vegetarische Bolognese-Rezept musst du nicht unbedingt Mandelmilch verwenden. Du kannst hier auch andere unges\u00fc\u00dfte vegane Milch verwenden. Hafermilch empfehle ich hier nicht zu verwenden, da diese von Natur aus etwas s\u00fc\u00dflich ist und dennoch eher nach Hafer schmeckt. Ich empfehle neutrale Pflanzenmilch. <\/li><li><strong>Nudeln<\/strong>: Verwende f\u00fcr diese veganen Spaghetti Bolognese Vollkornnudeln, Zucchininudeln oder glutenfreie Nudeln.
