Wenn du den Geschmack von Buchweizen magst, dann ist dieses glutenfreie Brotrezept etwas f\u00fcr dich. <\/p>\n\n\n\n<p>Es ist luftig und zart wie du es von den Broten von der B\u00e4ckerei kennst. Leider hat mir nie die Konsistenz von Backpulver-Buchweizen-Brote gefallen. Oft waren sie mir zu \u00f6lig und hatten einfach nicht die Krume die man von Brot kennt.&nbsp;<\/p>\n\n\n\n<p>So habe ich mich an diesem Buchweizenbrot Rezept versucht, und es ist mir super gelungen. <\/p>\n\n\n\n<p>Ich bin immer noch begeistert davon, wie gut dieses glutenfreie Brot geschmeckt hat. Es ist nicht nur ohne Gluten, sondern auch \u00f6lfrei, nussfrei, sojafrei.<\/p>\n\n\n\n<p>Das Brot kannst du auch toll trocknen und daraus glutenfreies Paniermehl zubereiten.&nbsp;<\/p>\n\n\n\n\n\n<h2 id=\"zutaten\"   class=\"wp-block-heading\" >Zutaten<\/h2>\n\n\n\n<p>Schauen wir uns jetzt einmal die Zutaten an, die in diesem tollen glutenfreien Brot stecken. Dazu verwende einfach \u00bd W\u00fcrfel frische Hefe.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-tahini\">Tahini<\/h3>\n\n\n\n<p>Du m\u00f6chtest keinen Tahini verwenden, dann verwende doch einfach ein Nussmus oder Sonnenblumenkernemus.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-leinsamen\">Leinsamen<\/h3>\n\n\n\n<p>Die Leinsamen kannst du eins zu eins mit Chia Samen ersetzen. Dabei musst du Chia Samen nicht schroten.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-sonnenblumenkerne\">Sonnenblumenkerne<\/h3>\n\n\n\n<p>Hier kannst du auch andere Samen und Kerne verwenden. F\u00fcr 5-10 min stehen lassen. In der Zwischenzeit in eine R\u00fchrsch\u00fcssel von einer K\u00fcchenmaschine 750g Buchweizenmehl, geschrotete Leinsamen und 2 EL Sonnenblumenkerne vermengen.&nbsp;<\/p>\n\n\n\n<div class=\"wp-block-mv-video\"><div class=\"mv-video-target mv-video-id-m58g6ewjdi6ojeeqrv35\" data-video-id=\"m58g6ewjdi6ojeeqrv35\" data-ratio=\"16:9\" data-volume=\"70\"><\/div><\/div>\n\n\n\n<p>Jetzt das Hefegemisch mit einem Knethaken auf niedriger Stufe verkneten. Dies l\u00e4sst du f\u00fcr ca. 5 Minuten kneten. Gegebenenfalls dr\u00fccke immer mal wieder den Teig runter, schaue dass das ganze Mehl verknetet wird.&nbsp;<\/p>\n\n\n\n<p>Jetzt gebe das Salz hinzu und knete auf mittlerer Stufe f\u00fcr ca. 2 min.&nbsp;<\/p>\n\n\n\n<p>Lasse den Teig f\u00fcr ca. 60 min abgedeckt an einem warmen Ort gehen.&nbsp;<\/p>\n\n\n\n<p>Nimm eine Kastenform und lege diese mit Backpapier aus. Jetzt knete kurz den Teig und gebe diesen in die Kastenform.&nbsp;<\/p>\n\n\n\n<p>Decke die Kastenform ab und lasse das Brot weitere 40 Minuten gehen. Heize in der Zwischenzeit den Backofen auf 220\u00b0 C vor und gebe ein backofenfestes Sch\u00e4lchen in den Backofen. Stelle es am besten auf den Boden.&nbsp;<\/p>\n\n\n\n<p>Jetzt das Brot einem einschneiden und auf Wunsch noch mit ein paar Samen bestreuen.&nbsp;<\/p>\n\n\n\n<p>Jetzt das Brot in den Backofen schieben und direkt auf ca. 200\u00b0C runterschalten und f\u00fcr ca. 50-60 min backen. Schaue immer mal wieder nach der Farbe, je nachdem ob du es dunkler magst, kannst du es auch etwas l\u00e4nger backen lassen.&nbsp;<\/p>\n\n\n\n<p>Fertig gebacken, hebe das Brot aus der Kastenform und lasse es auf einem Kuchengitter abk\u00fchlen.&nbsp;<\/p>\n\n\n\n<p>Bevor du es anschneidest, lasse es erst komplett abk\u00fchlen. Wir schneiden es gerne mit einer Brotschneidemaschine.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-im-voraus-zubereiten\">im Voraus zubereiten<\/h3>\n\n\n\n<p>Das Brot eignet sich prima f\u00fcr im Voraus. In einem Brotkorb h\u00e4lt es sich ein paar Tage. Ich mussen sagen, es wird aber trockener desto \u00e4lter es wird. Du kannst es auch als Abendbrot belegen. Wir essen es auch gerne zu nem Teller Suppe.&nbsp;<\/p>\n\n\n\n<p>Lasse es trocknen und zermahle es zu Paniermehl.&nbsp;<\/p>\n\n\n\n<h2 id=\"aufbewahrung\"   class=\"wp-block-heading\" >Aufbewahrung<\/h2>\n\n\n\n<p>Das Brot l\u00e4sst sich toll in einem Brotkorb bei Raumtemperatur aufbewahren. Hier wird das Brot ca. 5 Tage halten. Bisher ist es bei uns noch nicht so alt geworden. Es schmeckt einfach zu gut.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-wie-einfrieren\">Wie einfrieren?<\/h3>\n\n\n\n<p>Schneide das glutenfreie Brot in Scheiben und friere es ein.
