festkochend sind.&nbsp;<\/p>\n\n\n\n<p>So bleiben die Kartoffeln beim Kochen des veganen Currys erhalten und f\u00e4llt nicht zusammen und wird matschig, was bei st\u00e4rkehaltigen oder besser mehligkochenden Kartoffeln passiert.&nbsp;<\/p>\n\n\n\n<p>Ich bevorzuge vorwiegend festkochende Kartoffeln, da diese noch ihre Form behalten aber gleichzeitig cremiger schmecken und nicht ganz so data-volume=\"70\"><\/div><\/div>\n\n\n\n<p>Rote Kartoffeln kannst du ungesch\u00e4lt in das vegane Curry geben und behalten auch ihre Form.&nbsp;<\/p>\n\n\n\n<p>Russet Kartoffeln sind eher st\u00e4rkehaltig und neigen dazu zu zerfallen. Sie geben auch nicht viel eigen Geschmack, da diese eher w\u00e4ssrig schmecken.&nbsp;<\/p>\n\n\n\n<p>Wenn du Russet verwenden m\u00f6chtest, empfehle ich dir, diese etwas sp\u00e4ter hinzuzugeben. Ersetze die gr\u00fcnen Bohnen in dem Curry einfach durch ein anderes Gem\u00fcse deiner Wahl.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-kichererbsen\">Kichererbsen&nbsp;<\/h3>\n\n\n\n<p>Die Kichererbsen kannst du auch durch Tofu oder Tempeh ersetzen.&nbsp; Das ist ganz dir \u00fcberlassen was du machen m\u00f6chtest.&nbsp;<\/p>\n\n\n\n<p>Beim Tofu empfehle ich dir diesen erstmal im Backofen knusprig zu backen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-curry-pulver\">Curry Pulver&nbsp;<\/h3>\n\n\n\n<p>In einem gut sortieren Supermarkt solltest du gelbes Currypulver finden. Wenn du jetzt zum Beispiel schon Garam Masala Gew\u00fcrz zu Hause hast, kannst du auch dieses verwenden. Vermutlich wird dein Curry dann nicht so sch\u00f6n gelb. Aber es wird immer noch herrlich nach indischen Aromen schmecken.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-kokosmilch\">Kokosmilch&nbsp;<\/h3>\n\n\n\n<p>Wenn du keine Kokosmilch verwenden m\u00f6chtest, dann verwende doch einfach eine Cashewmilch. Dazu mixe 100 g Cashews auf 1 l Milch.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-spinat\">Spinat&nbsp;<\/h3>\n\n\n\n<p>Den Spinat kannst du auch ganz einfach durch einen anderes Blattgem\u00fcse wie Gr\u00fcnkohl ersetzen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-pfeilwurzelpulver\">Pfeilwurzelpulver&nbsp;<\/h3>\n\n\n\n<p>Pfeilwurzelpulver ist St\u00e4rke, die die So\u00dfe bindet. Du kannst einfach das Gem\u00fcse verwenden was du im K\u00fchlschrank rumliegen hast.. Es eignet sich perfekt dazu Rest zu verwenden.&nbsp;<\/p>\n\n\n\n<p>Ich bereite gerne das Curry zu und variiere mit dem Gem\u00fcse was ich hinzugebe.&nbsp;<\/p>\n\n\n\n<p>Gem\u00fcsesorten die sehr gut passen sind Zucchini, Aubergine, Paprika, Blattgem\u00fcse, Pilze, Zuckerschoten.&nbsp;<\/p>\n\n\n\n<p>Welches Gem\u00fcse verwendest du denn gerne in deinem Curry?&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-keto\">Keto<\/h3>\n\n\n\n<p>Du m\u00f6chtest ein veganes keto Curry herstellen. Kein Problem ersetze die Kartoffeln mit einem Kopf Blumenkohl und gebe etwas mehr gr\u00fcne Bohnen anstelle von Kichererbsen hinzu.. Und voila du hast ein keto freundliches Rezept.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-paleo\">Paleo<\/h3>\n\n\n\n<p>Anstelle der Kichererbsen gebe gr\u00fcne Bohnen hinzu. Anstelle der normalen Kartoffel verwende S\u00fc\u00dfkartoffel. So hast du ein schnelles Curry nicht nur vegan auch paleo freundlich.&nbsp;<\/p>\n\n\n\n\n\n<h2 id=\"zubereitung\"   class=\"wp-block-heading\" >Zubereitung<\/h2>\n\n\n\n<p>Fange damit an die Zwiebel, Knoblauch. Karotte und Ingwer klein zuhacken. Brate diese in der Pfanne mit Wasser an. Wenn du merkst das die Pfanne dunkel wird gebe etwas mehr Wasser hinzu und r\u00fchre es mal um.&nbsp;<\/p>\n\n\n\n<p>Das machst du solange bis die Zwiebel braun werden.&nbsp;<\/p>\n\n\n\n<p>Schneide in der Zwischenzeit die Kartoffeln und gr\u00fcne Bohnen in mundgerechte St\u00fccke.&nbsp;<\/p>\n\n\n\n<p>Ich verwende gefrorene Bohnen. Du kannst aber auch frische verwenden.&nbsp;<\/p>\n\n\n\n<p>Tropfe die kichererbsen ab.&nbsp;<\/p>\n\n\n\n<p>Jetzt gebe das Tomatenmark und die Gew\u00fcrze zu den Zwiebeln und brate diese kurz an.&nbsp;<\/p>\n\n\n\n<p>L\u00f6sche es nun mit der Gem\u00fcsebr\u00fche ab und gebe die Karotten, gr\u00fcne Bohnen und kichererbsen hinzu.&nbsp;<\/p>\n\n\n\n<p>Lasse es nun mit geschlossenem Deckel f\u00fcr ca. 10-15 Minuten k\u00f6cheln. Dabei stelle die Hitze auf mittlere Stufe.&nbsp;<\/p>\n\n\n\n<p>Steche mit einem Messer in die Kartoffel und Bohnen und schaue ob diese weich sind. Wenn sie keinen Wiederstand geben, sind diese weich.&nbsp;<\/p>\n\n\n\n<p>Gebe den Spinat hinzu.&nbsp;<\/p>\n\n\n\n<p>Verr\u00fchre die Pfeilwurzelst\u00e4rke mit der Kokosmilch und gebe diese zum Curry.&nbsp;<\/p>\n\n\n\n<p>Lasse es kurz erw\u00e4rmen und r\u00fchre es um. Wenn du gefrorenen Spinat verwendest, warte bis dieser erw\u00e4rmt ist.&nbsp;<\/p>\n\n\n\n<p>Schmecke das Curry kurz ab und serviere es in Tellern.<\/p>\n\n\n\n<p>Garnieren es mit frischem Koriander oder Petersilie.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-im-voraus-zubereiten\">Im Voraus zubereiten&nbsp;<\/h3>\n\n\n\n<p>Das vegane Kartoffelcurry eignet sich hervorragend als Meal Prep und l\u00e4sst sich prima im Voraus zubereiten. Pseudogetreide schmeckt auch toll zu dem Curry.&nbsp;<\/p>\n\n\n\n<p>Naan, indisches Fladenbrot &nbsp; Tunke einfach ein St\u00fcck des weichen Fladenbrots nach indischer Art in dein Curry.&nbsp;<\/p>\n\n\n\n<p>&nbsp;Ger\u00f6steter Blumenkohl schmeckt super lecker zu curry und eine tolle low carb Alternative.&nbsp;<\/p>\n\n\n\n<h2 id=\"aufbewahrung\"   class=\"wp-block-heading\" >Aufbewahrung<\/h2>\n\n\n\n<p>Wie kalt stellen&nbsp;<\/p>\n\n\n\n<p>Im K\u00fchlschrank halten sich Reste f\u00fcr ca. 4-5 Tage auf.&nbsp;<\/p>\n\n\n\n<p>Ich muss sagen am n\u00e4chsten Tag schmeckt es noch besser. Die Aromen entfalten ihren vollen Geschmack.&nbsp;<\/p>\n\n\n\n<p>Wie einfrieren&nbsp;<\/p>\n\n\n\n<p>Du kannst das Curry auch portionsweise einfrieren. Allerdings kann es sein das sich die komsziszenz der Kartoffeln etwas ver\u00e4ndert.&nbsp;<\/p>\n\n\n\n<h2 id=\"tips\"   class=\"wp-block-heading\" >Tips<\/h2>\n\n\n\n<p>Du m\u00f6chtest das Curry noch cremiger? Empfehle ich dir Cashewcreme oder auch Kokoscreme herzustellen. Dabei haben Cashews ges\u00fcndere Fette als Kokos.&nbsp;<\/p>\n\n\n\n<p>Du k\u00f6nntest auch Kokosmilch light verwenden. Wobei dann das Curry nicht so reichhaltig ist..
