Schneide dazu die holzigen Enden ab. Und den Spargel in 2-2,5 cm gro\u00dfe St\u00fccke schneiden.<\/p>\n\n\n\n<p>Den Spargel mit den gefrorenen Erbsen in die Br\u00fche geben und ca. 3 Minuten k\u00f6cheln lassen. Du kannst die Hitze etwas reduzieren.<\/p>\n\n\n\n<p>Nehme einen Schauml\u00f6ffel und sch\u00f6pfe den Spargel und die Erbsen ab. Stelle nun die Hitze der Br\u00fche auf die niedrigste Stufe, damit sie warm bleibt. Wir brauchen noch die Br\u00fche.<\/p>\n\n\n\n<p>Zwiebel und Sellerie w\u00fcrfeln und in einer gro\u00dfen beschichteten Pfanne bei mittlerer Hitze f\u00fcr das Risotto anschwitzen.<\/p>\n\n\n\n<p>Ab und zu einen Schluck Wasser zugeben. Das machst du, bis die Zwiebeln leicht braun werden. Gehackten Knoblauch hinzugeben und ebenfalls kurz mitd\u00fcnsten.<\/p>\n\n\n\n<p>Gebe nun den Reis hinzu und lasse den Reis etwa 5 Minuten braten.<\/p>\n\n\n\n<p>Der Reis sollte an den R\u00e4ndern transparent werden und leicht Farbe annehmen.<\/p>\n\n\n\n<p>F\u00fcge nun ca. 250 ml der warmen Br\u00fche zur Reismischung geben. Bei mittlerer Hitze kochen lassen, bis die Br\u00fche aufgesogen ist. F\u00fcge nun weitere 500 ml hinzu und lasse es k\u00f6cheln. Probiere dein Reis nach etwa 40 Minuten.<\/p>\n\n\n\n<p>Ist es weich oder muss es etwas l\u00e4nger kochen? Der Reis sollte al dente, aber gleichzeitig cremig sein. Vollkornreissorten brauchen l\u00e4nger.<\/p>\n\n\n\n<p>Ich habe das Rezept mit einer Vollkorn-Sorte zubereitet, daher kann es je nach Reissorte variieren.<\/p>\n\n\n\n<p>Wenn der Reis al dente und cremig ist, eine Sch\u00f6pfkelle Br\u00fche hinzuf\u00fcgen. Jetzt Spargel, Erbsen dazugeben. Und die Br\u00fche aufsaugen lassen.<\/p>\n\n\n\n<p>Risotto vom Herd nehmen und Wei\u00dfweinessig, Parmesan, Tahini-Creme unterr\u00fchren. F\u00fcge auch den Zitronensaft und die Schale hinzu. Mit Salz und Pfeffer w\u00fcrzen.<\/p>\n\n\n\n<p>Das Risotto in kleinen Sch\u00e4lchen anrichten und etwas Parmesan dar\u00fcber streuen.<\/p>\n\n\n\n<h2 id=\"substitutionen\"   class=\"wp-block-heading\" >Substitutionen<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Knollensellerie:<\/strong> Wenn du keinen Knollensellerie findest, kannst du ihn durch 1-2 Stangen fein gew\u00fcrfelten Sellerie ersetzen. Ich muss sagen, ich versuche immer, etwas Sellerie einzufrieren, um einem Gericht zus\u00e4tzlichen Geschmack zu verleihen.<\/li><li><strong>Risottoreis:<\/strong> Die Auswahl an verschiedenen Reissorten ist riesig. Doch nicht jeder Reis eignet sich gleicherma\u00dfen f\u00fcr ein cremiges veganes Risotto. Ein Risotto soll cremig sein, die Rundreisk\u00f6rner aber noch bissfest sein. Bei der Auswahl von Reis ist es wichtig, dass du Reis verwendest, der zwei Eigenschaften hat: saugf\u00e4hig und hoher St\u00e4rkegehalt. Welche Reissorten gibt es jetzt?<ul><li>Arborio-Reis: Du kannst den ber\u00fchmtesten Reis verwenden, dank seiner Eigenschaften ist er cremig und dennoch bissfest.<\/li><li>Carnaroli: Dieser Reis duftet beim Kochen nach frischem Brot. Und wer liebt nicht den Geruch von frischem Brot.<\/li><li>Baldo: Es bleibt bissfest, hat aber eine hervorragende Saugf\u00e4higkeit.<\/li><\/ul><\/li><li><strong>Parmesan<\/strong>: Wer keinen veganen Parmesan zubereiten m\u00f6chte, kann auch Hefeflocken verwenden. So bekommst du den k\u00e4sigen Geschmack in dein Risotto. Aber ich muss sagen, dass dein Risotto nicht so cremig wird wie mit dem Parmesan. Die Cashewn\u00fcsse machen das Risotto ultra cremig.<\/li><li><strong>Spargel:<\/strong> In der Spargelzeit verwende ich am liebsten frischen Spargel. K\u00fchle deinen Reis einfach in einem luftdichten Beh\u00e4lter f\u00fcr etwa 3-4 Tage.<\/li><li><strong>Wie erw\u00e4rme ich das Risotto?<\/strong> Erw\u00e4rme dein Risotto bei mittlerer Hitze mit etwas Wasser oder Br\u00fche. Immer umr\u00fchren. Oder stelle das Risotto in die Mikrowelle und lasse es ca. 2-3 Minuten erw\u00e4rmen.<\/li><li><strong>Gefrierschrank:<\/strong> Wenn du zu viel \u00fcbrig hast und eine Woche lang kein Risotto essen m\u00f6chtest, kannst du es ganz einfach einfrieren. Wichtig ist, dass das Risotto schnell eingefroren wird. Das Risotto gebe ich portionsweise in gefriergeeignete Beh\u00e4lter und lasse sie komplett ausk\u00fchlen. Sobald sie abgek\u00fchlt sind, stelle ich sie in den Gefrierschrank. Dein Risotto h\u00e4lt sich dort etwa 3 Monate.<\/li><li><strong>Wie taue ich gefrorenes Risotto auf?<\/strong> Es gibt zwei M\u00f6glichkeiten, dein gefrorenes Spargel-Erbsen-Risotto aufzutauen. Die erste M\u00f6glichkeit ist, das Risotto langsam und schonend aufzutauen. Dazu das Risotto \u00fcber Nacht in den K\u00fchlschrank stellen. Erw\u00e4rme das Risotto vor dem Servieren einfach in einem Topf oder in der Mikrowelle, wie oben erw\u00e4hnt. Du kannst den Schritt des Auftauens auch weglassen und das gefrorene Risotto direkt in die Mikrowelle oder den Topf geben und dann erneut erhitzen. Verwende zun\u00e4chst die Auftaufunktion der Mikrowelle, bevor du das Risotto aufw\u00e4rmst. Im Topf kannst du das Risotto auf niedriger Stufe aufw\u00e4rmen, damit es nicht anbrennt.<\/li><\/ul>\n\n\n\n<h2 id=\"serviervorschlag\"   class=\"wp-block-heading\" ><br>Serviervorschlag<br><\/h2>\n\n\n\n<p>Ein Risotto ist im Grunde ein komplettes Gericht. Dazu muss man eigentlich nichts servieren. Und dank Reis macht er lange satt.<br>Dazu kann man einen Beilagensalat servieren, was wir gerne machen. Wie ein <a href=\"https:\/\/veeatcookbake.com\/de\/caesar-salat-vegan\/\">Caesar-Salat<\/a>.<\/p>\n\n\n\n<p>Du kannst auch Blumenkohlsteaks servieren.<\/p>\n\n\n\n<h2 id=\"meal-prep\"   class=\"wp-block-heading\" >Meal Prep<\/h2>\n\n\n\n<p>Dieses traditionelle Risotto-Rezept ist ein gro\u00dfartiges Rezept um Essen im Voraus zuzubereiten. Mache es an einem Wochenende und genie\u00dfe es unter der Woche als einfaches Abendessen unter der Woche.<\/p>\n\n\n\n<div class=\"wp-block-group has-background\" style=\"background-color:#f6f6f6\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<h2 id=\"tipps\"   class=\"wp-block-heading\" >Tipps<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Wie oben erw\u00e4hnt, ist die Wahl des richtigen Reis der Schl\u00fcssel zu einem perfekten Risotto. Wenn du dich f\u00fcr eine der oben genannten Sorten entscheiden, sollte einem guten Risotto nichts mehr im Wege stehen. Ich schaue immer, ob ich eine Vollkornversion der oben genannten Sorten finden kann.<\/li><li>Gebe dem Reis Zeit, die Br\u00fche aufzunehmen, deshalb f\u00fcge ich immer eine Kelle oder Tasse auf einmal hinzu. Es dauert eine Weile, bis das Risotto fertig ist.<\/li><li>Lasse den Reis bei niedriger oder mittlerer Hitze k\u00f6cheln.<\/li><li>Wer gerne mit Wein kocht, kann den Wei\u00dfweinessig weglassen. Und den Reis nach dem Anbraten mit etwa \u00bc Tasse (60 ml) Wei\u00dfwein abl\u00f6schen. Warte, bis der Wein verkocht ist, bevor du die Gem\u00fcsebr\u00fche hinzugibst.<\/li><li>Wenn der Reis noch nicht cremig und bissfest ist und die Br\u00fche im Topf aufgebraucht ist, dann noch etwas hei\u00dfe Gem\u00fcsebr\u00fche oder Wasser hinzugeben. Es kann sein, dass du den Reis zu schnell gekocht hast, oder je nach Sorte z.B. Vollkornreis kann l\u00e4nger dauern.<\/li><li>Variiere beim Gem\u00fcse und nehme, was gerade Saison hat.<\/li><\/ul>\n<\/div><\/div>\n\n\n\n<h2 id=\"faq\"   class=\"wp-block-heading\" >FAQ<\/h2>\n\n\n\n<div class=\"schema-faq wp-block-yoast-faq-block\"><div class=\"schema-faq-section\" id=\"faq-question-1680125000449\"><strong class=\"schema-faq-question\">Ist Risotto vegan?<\/strong> <p class=\"schema-faq-answer\">Warst du schon einmal in einem Restaurant und hast ein leckeres Risotto auf der Speisekarte entdeckt, bist dir aber nicht sicher, ob das Risotto vegan ist? Wenn wir uns das italienische Gericht genauer ansehen, sehen wir das:<br\/>Rinder- oder Knochenbr\u00fche wird in Risotto verwendet, du m\u00fcsstest im Restaurant fragen, ob sie Gem\u00fcsebr\u00fche verwenden k\u00f6nnten.<br\/>Dann wird Parmesan zum Reisgericht gegeben. Je nach Restaurant wird dies wahrscheinlich keine Alternative sein, es sei denn, du befindest dich in einem Restaurant mit etlichen veganen Optionen.<br\/>Butter wird auch dem Risotto hinzugef\u00fcgt. Und wir wissen, dass Butter aus Kuhmilch hergestellt wird. Butter l\u00e4sst sich ganz einfach durch vegane Margarine ersetzen oder einfach weglassen.<br\/>Fazit: Wenn Risotto vegan ist, dann nein. Die meisten Risotto-Gerichte enthalten Parmesank\u00e4se. Aber ich habe eine L\u00f6sung f\u00fcr dich. Langkornreis mit wenig St\u00e4rke macht dein Risotto beispielsweise nicht so cremig wie die oben genannten Reissorten Arborio oder Baldo.<br\/>Wir f\u00fcgen auch etwas Tahini hinzu, da wir kein \u00d6l oder Butter verwenden. So erhalten wir noch eine cremige Note.<br\/>Der vegane Parmesan, wenn du ihn nach meinem Rezept aus Hefeflocken und Cashewn\u00fcssen oder Hanfsamen, Mandeln machst, verhilft dem
