Meist findest du diese Variante im Supermarkt. <\/p>\n\n\n\n<p>Dabei verleihen die welligen, lockigen, gekr\u00e4uselten Kanten eine tolle knusprige Struktur. Dieser Gr\u00fcnkohl eignet sich super als Salate und sautierte Gerichte.<\/p>\n\n\n\n<p><strong>Toskanischer Gr\u00fcnkohl<\/strong> (Dinosaurier Gr\u00fcnkohl oder Lacinato Gr\u00fcnkohl): Bei diesem Gr\u00fcnkohl handelt es sich um eine zarterer und weicherer Variante. Diesen Gr\u00fcnkohl kannst du super in Suppen und in gemischten Salaten verwenden.&nbsp;<\/p>\n\n\n\n<p><strong>Roter Gr\u00fcnkohl:<\/strong> Bis auf die Farbe ist der \u201cscharlachrote Gr\u00fcnkohl\u201d dem gekr\u00e4uselten sehr \u00e4hnlich. Dabei kann der Gr\u00fcnkohl tiefrot oder violett sein. Dank seiner tollen Farbe bietet sich dieser Gr\u00fcnkohl auch als Salat an.&nbsp;<\/p>\n\n\n\n<p><strong>Baby Gr\u00fcnkohl: <\/strong>Hierbei handelt es sich um nichts anderes als eine junge Version des gekr\u00e4uselten Gr\u00fcnkohls. <\/p>\n\n\n\n<p>Der Baby-Gr\u00fcnkohl wird nur fr\u00fcher geerntet. Bei dem Salat bietet sich an diesen als Mischsalat zu verwenden, oft finden man diesen in Salat-Mixen im Supermarkt.<\/p>\n\n\n\n<p>Bei diesem Rezept kannst du nach belieben deinen Lieblings Gr\u00fcnkohl verwenden. Wenn du Gr\u00fcnkohl anfasst, merkst du, das dieser eher fest, steif in seiner Textur ist.<\/p>\n\n\n\n<p>Das macht es doch eher umst\u00e4ndlich zu kauen. Wenn du jetzt den Gr\u00fcnkohl massierst, verwandelt sich seine Textur in weiche, zarte Bl\u00e4tter und die Bitterkeit verschwindet auch, da dieser den Geschmack des Dressings aufnimmt.&nbsp;&nbsp;<\/p>\n\n\n\n<h2 id=\"wie-massieren\"   class=\"wp-block-heading\">Wie massieren?<\/h2>\n\n\n\n<p>Es ist wichtig, dass du die Bl\u00e4tter von den St\u00e4ngel zupfst. Dabei rei\u00dfe einfach die Bl\u00e4tter mit deiner Hand vom St\u00e4ngel ab. Dabei achte direkt, dass du in mundgerechte St\u00fccke zupfst.&nbsp;<\/p>\n\n\n\n<p>Den Gr\u00fcnkohl gibst du dann in eine gro\u00dfe Sch\u00fcssel. Gebe das Dressing dr\u00fcber und massiere den Gr\u00fcnkohl mit deinen H\u00e4nden.&nbsp;<\/p>\n\n\n\n<p>Dabei ist es wichtig, dass du den Gr\u00fcnkohl f\u00fcr etwa 2 Minuten lang mit den H\u00e4nden massierst. Du wirst merken, seine Textur \u00e4ndert sich. Du siehst, der Gr\u00fcnkohl ist von Dressing \u00fcberzogen und beginnt zu welken. Dabei reduziert sich das Volumen um ca. 20-30%.&nbsp;<\/p>\n\n\n\n<p>Du m\u00f6chtest den Gr\u00fcnkohl auch nicht zu lange massieren, sonst sieht er aus wie Salat, der zu lange in Dressing schwimmt.&nbsp;<\/p>\n\n\n\n<p>Wenn es schwer ist festzustellen, ob er genug massiert ist. Probiere ein Blatt. Ist es noch zu fest zu kauen, dann massiere noch etwas weiter? Dabei ersetze es zu gleichen Mengen. Wenn du keine N\u00fcsse magst oder nicht essen kannst, dann verwende doch Samen. Hier k\u00f6nnte ich mir K\u00fcrbissamen sehr gut vorstellen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">S\u00fc\u00dfkartoffel&nbsp;<\/h3>\n\n\n\n<p>Anstelle von S\u00fc\u00dfkartoffel kannst du auch gew\u00fcrfelten Butternut K\u00fcrbis verwenden. Dieser verleiht eine leckere Note. Dabei verfahre wie bei der S\u00fc\u00dfkartoffel.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Rosinen<\/h3>\n\n\n\n<p>Die einen m\u00f6gen Rosinen, die anderen hassen die schrumpel Traube. Wenn du kein Fan von Rosinen bist, kannst du auch andere Trockenfr\u00fcchte verwenden. Zum Beispiel bieten sich hier&nbsp; getrocknete Cranberries, gew\u00fcrfelte Datteln an. Ich kann mir auch vorstellen, dass frisch geschnittene, filetierte Orangen sehr lecker schmecken.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Rotweinessig<\/h3>\n\n\n\n<p>Anstelle von Rotweinessig kannst du auch anderen Essig verwenden, z.B. Wei\u00dfweinessig, Apfelessig oder einen anderen Favorisierten.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Tahini<\/h3>\n\n\n\n<p>Du m\u00f6chtest kein Tahini verwenden, kein Problem. Verwende einfach ein anderes Nussmus. Du musst also nichts anpassen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Paleo<\/h3>\n\n\n\n<p>Auch f\u00fcr eine Paleo Ern\u00e4hrung eignet sich dieser Gr\u00fcnkohlsalat.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Keto<\/h3>\n\n\n\n<p>Um einen keto Gr\u00fcnkohlsalat daraus zu machen, m\u00fcssen wir die S\u00fc\u00dfkartoffel durch einen K\u00fcrbis ersetzen. Schneide die S\u00fc\u00dfkartoffel in W\u00fcrfel und backe sie mit 2 EL Gem\u00fcsebr\u00fche f\u00fcr 30-45 Minuten. Pr\u00fcfe, ob die S\u00fc\u00dfkartoffel durchgebacken ist, in dem du mit einem Messer hinein stichst.<\/p>\n\n\n\n<p>W\u00e4hrenddessen bereite das Dressing zu. Daf\u00fcr gebe alle Zutaten f\u00fcr das Dressing in einen Hochleistungsmixer und mixe bis es cremig ist.<\/p>\n\n\n\n<p>Den Gr\u00fcnkohl zupfen oder hacken und in eine gro\u00dfe Sch\u00fcssel geben. Massiere den Gr\u00fcnkohl mit dem Dressing und deinen sauberen H\u00e4nden f\u00fcr ca. 2-3 Minuten.&nbsp;<\/p>\n\n\n\n<div class=\"wp-block-mv-video\"><div class=\"mv-video-target mv-video-id-yely9zgp2peuoppzjd45\" data-video-id=\"yely9zgp2peuoppzjd45\" data-ratio=\"16:9\" data-volume=\"70\"><\/div><\/div>\n\n\n\n<p>2 \u00c4pfel ohne Kerne w\u00fcrfeln und zum Gr\u00fcnkohl geben.<\/p>\n\n\n\n<p>F\u00fcge gehackte Pekann\u00fcsse, gew\u00fcrfelte Avocado,Rosinen hinzu.<\/p>\n\n\n\n<p>Eine kleine rote Zwiebel w\u00fcrfeln.
