Dann m\u00f6chte ich dir hier ein paar M\u00f6glichkeiten aufzeigen, wie du welche Zutaten austauschen kannst.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-dattelpaste\">Dattelpaste<\/h3>\n\n\n\n<p>Du kannst die Dattelpaste auch durch Kokosbl\u00fctenzucker austauschen oder ein S\u00fc\u00dfungsmittel deiner Wahl verwenden.&nbsp;<\/p>\n\n\n\n<p>F\u00fcr die Dattelpaste kannst du getrocknete und eingeweichte Datteln, die entkernt sind, einweichen und dann mit etwas Wasser zu einer Paste in einem Hochleistungsmixer oder einem Food Prozessor verarbeiten.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-mandelmus\">Mandelmus<\/h3>\n\n\n\n<p>Du kannst das Mandelmus auch durch andere Nussmuse ersetzen. Z.B. Cashewmus.&nbsp;<\/p>\n\n\n\n<p>Was du auch machen kannst, ist Erdnussmus verwenden, wer liebt nicht die Kombination von Schokolade und Erdnuss. Dazu sage ich nur Peanut Butter Cups. Eine beliebte S\u00fc\u00dfigkeit in den USA. Erdnussmus umh\u00fcllt mit Schokolade.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-mandelmilch\">Mandelmilch<\/h3>\n\n\n\n<p>Hier kannst du zu gleichen Teilen die Mandelmilch durch eine pflanzliche Milchalternative ersetzen. Zum Beispiel Sojamilch, Hafermilch, Reismilch eignen sich hier sehr gut f\u00fcr.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-vanilleextrakt\">Vanilleextrakt<\/h3>\n\n\n\n<p>Anstelle von Vanilleextrakt kannst du auch auf Vanille Pulver zur\u00fcckgreifen. Dann habe ich hier f\u00fcr dich ein paar Variationen, die du vornehmen kannst, um diese an deine Ern\u00e4hrung anzupassen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-nussfrei\">Nussfrei<\/h3>\n\n\n\n<p>Du hast sicherlich gesehen, dass wir Mandelprodukte f\u00fcr diese veganen Schokomuffins verwenden. Du kannst diese ziemlich einfach ersetzen. Wie oben schon erw\u00e4hnt, kannst du die Mandelmilch durch eine andere vegane Milchalternative ersetzen.&nbsp;<\/p>\n\n\n\n<p>Jetzt bleibt noch das Mandelmus, das kannst du auch durch eine Nuss Alternative ersetzen. Zum Beispiel Mus aus Sonnenblumenkerne. Wenn dir das Rezept \u00f6lfrei nicht wichtig ist, dann kannst du nat\u00fcrlich auch auf z.B. Kokos\u00f6l zur\u00fcckgreifen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-glutenfrei\">Glutenfrei<\/h3>\n\n\n\n<p>Wenn du kein Mehl mit Gluten vertr\u00e4gst, dann kannst du hier auch auf eine glutenfreie Mehlbackmischung zur\u00fcckgreifen.&nbsp;&nbsp;<\/p>\n\n\n\n<p>Ich kann mir auch gut vorstellen, dass diese Muffins auch mit Hafermehl sehr gut schmecken. Achte hier nur darauf, dass du glutenfreie Haferflocken mahlst.&nbsp;<\/p>\n\n\n\n<p>Anstelle des Seitan Fix (Glutenpulver) kannst du auch ein 1 Leinsamen-Ei verwenden. Dazu ein 1 EL gemahlene Leinsamen mit 4 EL Wasser vermengen und f\u00fcr 15 Minuten stehen lassen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-keto\">Keto<\/h3>\n\n\n\n<p>Bei einer ketogenen Di\u00e4t geht es darum, so wenig Kohlenhydrate wie m\u00f6glich zu konsumieren. Anstelle von Mehl in diesem Rezept, kannst du auch feines gemahlenes Mandelmehl verwenden. Nehme dazu die gleiche Menge wie du Mehl verwenden w\u00fcrdest. Und nehme 2 EL davon weg und ersetze die 2 EL durch St\u00e4rke.&nbsp;<\/p>\n\n\n\n<p>Das Glutenpulver kannst du durch ein Leinsamen-Ei ersetzen. Dazu verwende \u00be der Menge von dem Mehl als Mandelmehl und \u00bc Tapiokast\u00e4rke.&nbsp;<\/p>\n\n\n\n<p>Lasse das Glutenpulver weg.&nbsp;<\/p>\n\n\n\n<h2 id=\"zubereitung\"   class=\"wp-block-heading\" >Zubereitung<\/h2>\n\n\n\n<p>Heize deinen Backofen auf 175 \u00b0C vor.&nbsp;<\/p>\n\n\n\n<p>Fange damit an die Mandelmilch mit dem Mandelmus in einer R\u00fchrsch\u00fcssel cremig zu verr\u00fchren. Gebe die Dattelpaste, sowie die restlichen nassen Zutaten bis auf den Apfel hinzu.&nbsp;<\/p>\n\n\n\n<p>Wenn die Zutaten alle gut vermengt sind, gebe alle trockenen Zutaten hinzu. Und verr\u00fchre kurz bis alles gut vermengt ist und keine Mehlnester mehr vorhanden sind.&nbsp;<\/p>\n\n\n\n<p>Jetzt reibe einen Apfel und hebe diesen vorsichtig unter.&nbsp;<\/p>\n\n\n\n<p>Bereite eine Muffinform vor. Dazu verwende ich Papier Muffinf\u00f6rmchen und lege sie in ein Muffinbackblech.&nbsp;<\/p>\n\n\n\n<p>Jetzt verteile den Teig gleichm\u00e4\u00dfig in die 12 F\u00f6rmchen und backe die Muffins.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-im-voraus-zubereiten\">Im Voraus zubereiten<\/h3>\n\n\n\n<p>Du kannst die Muffins einen Tag vorher backen und dann am n\u00e4chsten Tag genie\u00dfen.&nbsp;<\/p>\n\n\n\n<h2 id=\"backzeit\"   class=\"wp-block-heading\" >Backzeit<\/h2>\n\n\n\n<p>Die veganen Schokoladenmuffins backst du im vorgeheizten Backofen f\u00fcr ca. 20-30 Minuten.&nbsp;<\/p>\n\n\n\n<p>Mache hier immer die Zahnstocherprobe, ob diese auch wirklich durchgebacken sind. Dazu steche ich immer mit einem Zahnstocher in einen Muffin und schaue, ob etwas Teig am Zahnstocher h\u00e4ngen bleibt.<\/p>\n\n\n\n<h2 id=\"skalieren\"   class=\"wp-block-heading\" >Skalieren<\/h2>\n\n\n\n<p>Du m\u00f6chtest einen Schokoladenkuchen aus den Muffins backen? Da empfehle ich dir, die doppelte Menge an Zutaten zu verwenden.&nbsp;&nbsp;<\/p>\n\n\n\n<p>Wenn du weniger Muffins m\u00f6chtest, dann teile die Zutaten durch 12 und multipliziere es entsprechend mit der Anzahl an Muffins, die du haben m\u00f6chtest.&nbsp;<\/p>\n\n\n\n<p>Hier empfehle ich dir zur n\u00e4chsten glatten Zahl aufzurunden.&nbsp;<\/p>\n\n\n\n<h2 id=\"aufbewahrung\"   class=\"wp-block-heading\" >Aufbewahrung<\/h2>\n\n\n\n<p>Schauen wir uns mal an was du mit \u00fcbrig gebliebenen Schokomuffins machen kannst.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-wie-k-hlen\">Wie k\u00fchlen?<\/h3>\n\n\n\n<p>In einem verschlossenen Beh\u00e4lter kannst du die Muffins bis zu ca. 4 Tagen im K\u00fchlschrank aufbewahren.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-wie-einfrieren\">Wie einfrieren?<\/h3>\n\n\n\n<p>Hier empfehle ich dir zuerst die Muffins einzeln einzufrieren. Wenn diese gefroren sind, kannst du sie in einen entsprechenden Beh\u00e4lter geben.&nbsp;<\/p>\n\n\n\n<p>So kannst du einzeln Muffins herausnehmen, ohne das sie zusammengefroren sind. Die Muffins halten sich ca. 3 Monate im Gefrierschrank.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-wie-auftauen\">Wie auftauen?<\/h3>\n\n\n\n<p>Du kannst die Muffins einfach einen Abend vorher herausnehmen und im K\u00fchlschrank auftauen lassen.&nbsp;<\/p>\n\n\n\n<p>Du kannst auch die Schokomuffins kurz im Backofen erw\u00e4rmen. Das Wiegen ist genauer.&nbsp;<\/p>\n\n\n\n<p>Achte darauf, dass der Teig relativ dick ist. Das hilft dabei, dass sie sch\u00f6n aufgehen und die Apfelst\u00fccke gleichm\u00e4\u00dfig in den Muffins verteilt sind.&nbsp;<\/p>\n\n\n\n<p>Bei der Zahnstocherprobe kann es sein, dass durch den Apfel noch etwas Teig h\u00e4ngen bleibt.
