Oder herzhaft gef\u00fcllt werden sie zu einem leckeren und leichten Abendessen.&nbsp;<\/p>\n\n\n\n\n\n<h2 id=\"was-ist-ein-crepe\"   class=\"wp-block-heading\">Was ist ein Cr\u00eape?<\/h2>\n\n\n\n<p>Ein Cr\u00eape ist ein bretonischer Pfannkuchen, die nicht nur in Frankreich an Beliebtheit gewonnen haben.&nbsp;<\/p>\n\n\n\n<p>Bei den Crepes handelt es sich um sehr d\u00fcnne Pfannkuchen, die traditionell auf einer gusseisernen Platte zubereitet werden.&nbsp;<\/p>\n\n\n\n<p>Dabei wird der fl\u00fcssige Teig z\u00fcgig verstrichen, damit diese auch d\u00fcnn und gleichm\u00e4\u00dfig werden.&nbsp;<\/p>\n\n\n\n<p>Cr\u00eapes werden klassisch s\u00fc\u00df belegt. Die herzhafte Variante wird dabei Galette genannt. Wobei beide unterschiedliche Bedeutungen haben.&nbsp;<\/p>\n\n\n\n<p>Wenn du Cr\u00eapes als Mehrzahl \u201cCr\u00eapes\u201d sagen m\u00f6chtest, dann bleiben die letzten zwei Buchstaben \u201ces\u201d stumm.&nbsp;<\/p>\n\n\n\n<h2 id=\"wie-sollten-crepes-aussehen\"   class=\"wp-block-heading\">Wie sollten Crepes aussehen?<\/h2>\n\n\n\n<p>In Deutschland sieht man auf Jahrm\u00e4rkten gef\u00fchlt an jedem zweiten Stand eine Creperia. Leider wissen wir das traditionell Cr\u00eapes mit Eiern und Milch zubereitet werden. Und ich habe es geliebt, diese d\u00fcnnen Pfannkuchen aus Frankreich zu essen.&nbsp;<\/p>\n\n\n\n<p>Also musste ich mich an einer eifreien und milchfreien Version versuchen und ich muss sagen, diese franz\u00f6sischen Cr\u00eapes sind perfekt geworden. Sie haben die gleichen Eigenschaften wie die Franz\u00f6sischen:&nbsp;<\/p>\n\n\n\n<p>D\u00fcnn: super d\u00fcnne Pfannkuchen&nbsp;<\/p>\n\n\n\n<p>Elastisch: sie lassen sich super einfach falten und brechen nicht auseinander. Normal werden Crepes aus Weizenmehl oder auch Dinkelmehl zubereitet. Wenn du allerdings die klassische Variante f\u00fcr Galette machen m\u00f6chtest, verwende dieses Rezept und verwende statt des normalen Mehls ein Buchweizenmehl. Buchweizen ist glutenfrei.&nbsp;<\/p>\n\n\n\n<p>Traditionell werden Buchweizen Crepes herzhaft gegessen, diese schmecken aber auch mit einer s\u00fc\u00dfen F\u00fcllung.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Nussfreie Crepes<\/h3>\n\n\n\n<p>Du kannst die Crepes auch ohne N\u00fcsse zubereiten. Dazu anstelle von einem Nussmus zu einem Samenmus wie Sonnenblumenkernmus zur\u00fcckgreifen. Du kannst auch anstelle von unges\u00fc\u00dfter Mandelmilch auch of Sojamilch oder Hafermilch zur\u00fcckgreifen.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ahornsirup Alternative<\/h3>\n\n\n\n<p>Anstelle von Ahornsirup kannst du auch auf Dattelpaste zur\u00fcckgreifen. Verwende ein S\u00fc\u00dfungsmittel deiner Wahl.&nbsp;<\/p>\n\n\n\n<h2 id=\"zubereitung\"   class=\"wp-block-heading\">Zubereitung<\/h2>\n\n\n\n<p>Fange damit an das Nussmus mit der Milch cremig zu r\u00fchren.&nbsp;<\/p>\n\n\n\n<p>Gebe nun die restlichen Zutaten dazu und r\u00fchre es bis ein geschmeidiger Teig entsteht. Achte darauf, dass der Teig sehr fl\u00fcssig ist. Der sollte d\u00fcnnfl\u00fcssig sein. Je nach verwendetem Mehl kann es sein, dass du etwas mehr pflanzliche Milch unterr\u00fchren musst.&nbsp;<\/p>\n\n\n\n<p>Lasse den Teig nun f\u00fcr 30 min ruhen.&nbsp;<\/p>\n\n\n\n<p>In der Zwischenzeit heize eine gro\u00dfe Pfanne vor und gebe eine Kelle von dem Teig hinein. Mit der Unterseite der Kelle streiche ich den Teig glatt und so, dass sich der Teig \u00fcber den ganzen Pfannenboden ausbreitet. Dann einfach die Crepes zubereiten und auf einem Teller mit Backpapier zwischen jedem Crepe legen und im Backofen bei 150\u00b0C warmhalten.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Im Voraus zubereiten<\/h3>\n\n\n\n<p>Du kannst den Teig auch einen Abend vorher zubereiten und in einer verschlossenen Sch\u00fcssel im K\u00fchlschrank aufbewahren.&nbsp;<\/p>\n\n\n\n<p>Die Cr\u00eapes erst kurz vor dem Servieren in der Pfanne ausbacken.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Im Voraus zubereiten<\/h3>\n\n\n\n<p>Gerade am Anfang kann es schon sein, dass das Backen der Pfannkuchen zeitaufwendig ist. Da du in jeder Pfanne immer nur einen Cr\u00eape zubereiten kannst. Du wirst merken, mit etwas \u00dcbung gehen diese ratzfatz.&nbsp;<\/p>\n\n\n\n<p>Du kannst nat\u00fcrlich auch die Cr\u00eapes komplett im Voraus zubereiten und dann erw\u00e4rmen und F\u00fcllen. Die F\u00fcllung w\u00fcrde ich jedoch erst am Tag, an dem du sie essen m\u00f6chtest, darauf machen.&nbsp;<\/p>\n\n\n\n<h2 id=\"wie-crepes-fuellen\"   class=\"wp-block-heading\">Wie Crepes f\u00fcllen?<\/h2>\n\n\n\n<p>Hier sind wirklich keine W\u00fcnsche offen. Du kannst sie nach belieben F\u00fcllen. Wenn du Reste hast, lege zwischen jeden Crepe ein St\u00fcck Backpapier, damit diese nicht aneinander kleben. Achte darauf, dass du sie zuerst abk\u00fchlen l\u00e4sst. Du kannst sie nun im K\u00fchlschrank in einem Ziplock Beutel wie diese aufbewahren. Im K\u00fchlschrank heben sie sich ca. 5 Tage auf. Oder du frierst sie ein. Im Gefrierfach heben sich die Crepes ca. 2 Monate auf.&nbsp;<\/p>\n\n\n\n<p>Du kannst die Pfannkuchen entweder in der Mikrowelle f\u00fcr 15 sec erw\u00e4rmen oder im vorgeheizten Backofen.&nbsp;<\/p>\n\n\n\n<h2 id=\"tipps\"   class=\"wp-block-heading\">Tipps<\/h2>\n\n\n\n<p>Achte darauf, dass dein Teig d\u00fcnn ist. Du musst in der Lage sein, den Teig in der Pfanne zu schwenken und mit der Kelle verteilen, sodass die Crepes sehr d\u00fcnn werden.&nbsp;<\/p>\n\n\n\n<p>Ich empfehle dabei immer das Mehl zu wiegen, anstelle eines Messbechers mit Mehlangaben.
