Dieser milchfreie K\u00e4sekuchen ist eine tolle Alternative zu traditionellem K\u00e4sekuchen. <\/p>\n\n\n\n<p>Es ist nicht nur ein toller herbstlicher Kuchen zum Kaffeekranz oder Dessert, er ist auch super f\u00fcr Feiertage wie Weihnachten oder einfach, wenn du Lust auf einen guten K\u00e4sekuchen hast.&nbsp;<\/p>\n\n\n\n<p>Wie ich auf die Idee kam einen K\u00fcrbis K\u00e4sekuchen herzustellen? Und seien wir mal ehrlich, wer liebt nicht einen super cremigen und authentischen K\u00e4sekuchen.&nbsp;<\/p>\n\n\n\n<p>Und einen K\u00e4sekuchen mit K\u00fcrbis und den leckeren K\u00fcrbiskuchengew\u00fcrzen wie Nelke, Zimt usw. bringen deinen Kuchen zum n\u00e4chsten Level. Bereite den Kuchen f\u00fcr deinen n\u00e4chsten Geburtstag oder einfach, wenn du Lust auf einen cremigen Nachtisch hast.&nbsp;<\/p>\n\n\n\n<p>Dieses Kuchenrezept ist ein einfaches und schnelles Kuchenrezept. Wir ben\u00f6tigen nur ein paar Zutaten von denen du vielleicht sogar die meisten zu Hause hast.&nbsp;<\/p>\n\n\n\n<p>Bei diesem Rezept m\u00f6chte ich dir nicht nur schnell das Rezept geben, sondern auch noch Alternativem\u00f6glichkeiten aufzeigen, die du verwenden kannst, wenn du bestimmte Lebensmittel nicht verwenden m\u00f6chtest. <\/p>\n\n\n\n<p>Oder auch wie du den veganen K\u00fcrbis-K\u00e4sekuchen in vegan zubereiten kannst. Zum einen verwenden wir Vollkornmehl im Boden und Mehl in der F\u00fcllung.&nbsp;<\/p>\n\n\n\n<p>Um den K\u00fcrbisk\u00e4sekuchen in glutenfrei zu machen, kannst du das Mehl im Teig durch eine glutenfreie Mehlbackmischung ersetzen.&nbsp;<\/p>\n\n\n\n<p>In der F\u00fcllung kannst du zum Beispiel das Mehl durch Kichererbsenmehl ersetzen oder auch St\u00e4rke. Das Mehl in der K\u00e4sekuchenf\u00fcllung dient dazu die F\u00fcllung zu festigen. Kein Problem. Kurz m\u00f6chte ich dir erkl\u00e4ren f\u00fcr was die N\u00fcsse dienen.&nbsp;<\/p>\n\n\n\n<p>Im Teig dienen die Mandeln dazu, dass der Teig nicht austrocknet, da wir Vollkornmehl und kein \u00d6l verwenden. Stattdessen verwenden wir Mandelmehl und Nussmus.&nbsp;<\/p>\n\n\n\n<p>Anstelle von Mandelmus oder Cashewmus kannst du auch ein Samenmus zum Beispiel aus Sonnenblumenkerne verwenden.&nbsp;<\/p>\n\n\n\n<p>Als Mandelmehl brauchen wir eine Alternative, die auch voller gesunder fette steckt wie die Mandeln. Zum einen k\u00f6nntest du K\u00fcrbiskerne oder Sonnenblumenkerne fein mahlen, bis du ein feines Mehl hast und dieses verwenden.&nbsp;&nbsp;<\/p>\n\n\n\n<p>Du k\u00f6nntest aber auch Erdmandeln verwenden, die nicht zu N\u00fcssen z\u00e4hlen. Erdmandeln sind Knollen und m\u00fcssen vorher 24 Std eingeweicht werden.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Fertiges K\u00fcrbisp\u00fcree oder Selbstgemachtes<\/strong><\/h3>\n\n\n\n<p>In diesem Rezept habe ich fertiges K\u00fcrbisp\u00fcree verwendet. Es ging schneller und du kannst spontan den Kuchen backen. Aber dies soll dich nicht abschrecken, wenn du kein gekauftes P\u00fcree findest.&nbsp;<\/p>\n\n\n\n<p>Du kannst nat\u00fcrlich einfach zu Hause P\u00fcree herstellen. Dazu koche deinen K\u00fcrbis weich und p\u00fcriere ihn in deinem Hochleistungsmixer. Dazu verwende einfach 2 TL von der Gew\u00fcrzmischung. Und schmecke die F\u00fcllung kurz ab, und gebe je nach eigenem Geschmack etwas mehr hinzu. Ich muss dazu sagen, dass die Gew\u00fcrze nach dem Backen intensiver schmecken als vorher.&nbsp;<\/p>\n\n\n\n<p>Also schaue einfach wie du ihn am liebsten gew\u00fcrzt hast.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Kruste wie Graham Cracker<\/strong><\/h3>\n\n\n\n<p>Diese Kruste erinnert mich sehr stark an die amerikanischen Graham Cracker, die gerne als K\u00e4sekuchen Kruste verwendet werden. Nur diese finde ich noch einen Tick besser. Und das beste, sie ist ges\u00fcnder.&nbsp;<\/p>\n\n\n\n<p>Sie kommt ganz ohne hochverarbeiteter Lebensmittel aus und wird aus Mandelmehl, Mehl, Kokosbl\u00fctenzucker und Zimt hergestellt. Gebacken schmeckt es tats\u00e4chlich wie eine selbstgemachte Graham-Cracker-Kruste. Super lecker.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Zuckerfrei<\/strong><\/h3>\n\n\n\n<p>Du m\u00f6chtest den K\u00fcrbis-K\u00e4sekuchen nicht nur raffiniert zuckerfrei herstellen, sondern komplett ohne verarbeitete S\u00fc\u00dfungsmittel wie Kokosbl\u00fctenzucker, Stevia usw.&nbsp;<\/p>\n\n\n\n<p>Dann unbedingt weiterlesen. \ud83d\ude09&nbsp;<\/p>\n\n\n\n<p>Anstelle des Kokosbl\u00fctenzuckers im Teig kannst du ganz einfach Dattelp\u00fcree verwenden. Dazu nehme eingeweichte Datteln und p\u00fcriere sie im Hochleistungsmixer bis du ein feines P\u00fcree hast. Dazu gebe immer mal wieder einen Schluck Wasser hinzu.&nbsp;<\/p>\n\n\n\n<p>Datteln sind von Natur aus sehr s\u00fc\u00df. Sogar so s\u00fc\u00df, dass sie mir als Snack zu s\u00fc\u00df sind.&nbsp;<\/p>\n\n\n\n<p>Jetzt kommt der tricky Part, du kannst bei der F\u00fcllung auch auf Rohrohrzucker verzichten. Ich verwendete den Rohrohrzucker, weil ich die K\u00fcrbisfarbe nicht beeinflussen wollte. Kokosbl\u00fctenzucker w\u00fcrde die F\u00fcllung dunkel machen.&nbsp;<\/p>\n\n\n\n<p>Du kannst auch hier auf Dattelp\u00fcree zur\u00fcckgreifen. Allerdings kann es sein, dass die F\u00fcllung etwas dunkler wird als die auf dem Bild. Du kannst aber auch auf helles Trockenobst zur\u00fcckgreifen, z.B. Aprikosen.&nbsp;<\/p>\n\n\n\n<p>Mit Dattelp\u00fcree wird der Kuchen genauso lecker nur leicht dunkler. Leider konnte ich in dem Video nicht auf Datteln zur\u00fcckgreifen, weil diese ausverkauft waren.&nbsp;<\/p>\n\n\n\n<p>Hast du schon mal von Monkfruchtpulver geh\u00f6rt. Diese Frucht soll sehr s\u00fc\u00df sein und als Pulver verarbeitet kannst du damit Zucker 1:1 ersetzen. Vielleicht gef\u00e4llt dir diese Alternative f\u00fcr raffinierten Zucker.&nbsp;<\/p>\n\n\n\n<p>Hast du andere Ideen f\u00fcr S\u00fc\u00dfungsmitteln, die nat\u00fcrlich sind? Dann freue ich mich von dir unten zu lesen. Ich bin immer auf der Suche nach neuen Ideen wie ich Zucker ersetzen kann.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Zubereitung<\/strong><\/h3>\n\n\n\n<p>Fange damit an die Cashews einzuweichen.&nbsp;<\/p>\n\n\n\n<p>Bereite eine Springform mit Durchmesser von ca. 20 cm vor. Dazu lege ich den Boden mit Backpapier aus.&nbsp;<\/p>\n\n\n\n<p>Jetzt gebe alle Zutaten f\u00fcr den Teig in eine R\u00fchrsch\u00fcssel und verknete mit deinen&nbsp; H\u00e4nden den Teig zu einem streuselartigen Teig. Der Teig sollte gerade zusammen kommen aber nicht homogen werden wie z.B. ein Pizzateig.&nbsp;<\/p>\n\n\n\n<p>Nun verteile den Teig auf dem Boden, und gehe ca. 2 cm den Rand hoch.&nbsp;<\/p>\n\n\n\n<p>Jetzt bereiten wir die F\u00fcllung vor. Dazu nehme die abgetropften Cashews und die restlichen Zutaten bis auf den Joghurt in einen Hochleistungsmixer und mixe so lange bis eine super cremige Creme entsteht.&nbsp;<\/p>\n\n\n\n<p>Es sollten keine St\u00fccke mehr da sein und glatt sein. Das kann zwischen 2 und 4 Minuten dauern.&nbsp; Nun gebe die F\u00fcllung in eine Sch\u00fcssel und hebe den Joghurt vorsichtig unter.&nbsp;<\/p>\n\n\n\n<p>Bei dem Joghurt achte darauf, dass du einen cremigen Joghurt kaufst. Ich finde am&nbsp; besten klappen Sojajoghurt oder Mandeljoghurt. Kokosjoghurt ist oft zu fl\u00fcssig.&nbsp;<\/p>\n\n\n\n<p>Backe nun den Kuchen f\u00fcr ca. 1 Stunde bei 175\u00b0C. Die Mitte sollte noch leicht schwabbeln. Diese wird fest w\u00e4hrend dem Abk\u00fchlen.&nbsp;<\/p>\n\n\n\n<p>Lasse den K\u00e4sekuchen erst komplett abk\u00fchlen bevor du ihn anschneidest.&nbsp;<\/p>\n\n\n\n<p>So kommen wir zum N\u00e4chsten Punkt der meiner Meinung nach wichtig ist.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Im Voraus vorbereiten<\/strong><\/h2>\n\n\n\n<p>Du kannst den veganen K\u00e4sekuchen nicht nur im Voraus vorbereiten. Ich empfehle es dir sogar. So kannst du sichergehen, dass der Kuchen fest ist und dir beim Anschneiden nicht wegl\u00e4uft.&nbsp;<\/p>\n\n\n\n<p>Dazu bereite ich den K\u00e4sekuchen gerne einen Tag vorher zu und lasse ihn \u00fcber Nacht im K\u00fchlschrank ausk\u00fchlen. Dazu stelle ich den K\u00e4sekuchen in einen Kuchenbeh\u00e4lter und dann in den K\u00fchlschrank.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Servierm\u00f6glichkeiten<\/strong><\/h2>\n\n\n\n<p>Lasse den veganen K\u00fcrbiskuchen f\u00fcr ca. 20 Minuten auf Raumtemperatur kommen, so schmeckt der K\u00e4sekuchen am Besten.&nbsp;<\/p>\n\n\n\n<p>Bestreue den K\u00e4sekuchen wie in den Fotos und in dem Video mit gehackten N\u00fcssen.&nbsp;<\/p>\n\n\n\n<p>Zu einem K\u00fcrbiskuchen passt auch eine leckere Karamellsauce, die du aus Datteln herstellen kannst.&nbsp;<\/p>\n\n\n\n<p>Dazu nehme dir 175 g Datteln, 100 ml Mandelmilch, 2 EL Mandelmus und 1 TL Vanilleextrakt. Gebe alle Zutaten in den Hochleistungsmixer und mixe so lange bis eine super cremige Konsistenz entsteht.&nbsp;<\/p>\n\n\n\n<p>Das kann auch hier wieder 2 - 3 Minuten dauern. Es ist wichtig, dass keine St\u00fccke mehr vorhanden sind. Wenn es dir nicht s\u00fc\u00df genug ist, kannst du bis zu 120 ml Kokosnektar, Dattelsirup usw. hinzugeben.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Aufbewahrungsm\u00f6glichkeiten<\/strong><\/h2>\n\n\n\n<p>Du schaffst den Kuchen nicht in einer Runde zu essen, kein Problem der K\u00e4sekuchen l\u00e4sst sich super aufbewahren. Dazu hast du zwei M\u00f6glichkeiten.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">K\u00fchlschrank<\/h3>\n\n\n\n<p>Bewahre den K\u00e4sekuchen bis zu 5 Tage im K\u00fchlschrank auf. Dazu bewahre den Kuchen in einem Kuchenbeh\u00e4lter oder in einer verschlossenen Dose auf.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Gefrierfach<\/h3>\n\n\n\n<p>Du m\u00f6chtest nicht die ganze Woche \u00fcber K\u00fcrbiskuchen essen. Dann friere den K\u00e4sekuchen portionsweise ein. Dazu w\u00fcrde ich den K\u00e4sekuchen auf einen Teller stellen und in das Gefrierfach stellen. Wenn die Kuchenst\u00fccke gefroren sind, kannst du sie portionsweise in gefriersichere Beh\u00e4lter geben. Dort h\u00e4lt sich der Kuchen ca. 3 Monate<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Auftauen<\/h3>\n\n\n\n<p>Zum Auftauen den K\u00e4sekuchen einfach einen Abend vorher herausnehmen und im K\u00fchlschrank auftauen lassen. Wie oben erw\u00e4hnt, lasse den Kuchen auf Zimmertemperatur kommen, bevor du ihn servierst.&nbsp;<\/p>\n\n\n\n<p>Du kannst den Kuchen auch als Eistorte servieren und ihn gefroren servieren. Damit der Kuchen nicht mehr ganz so hart ist, empfehle ich dir den K\u00e4sekuchen ca. 1 Stunde vorher aus dem Gefrierfach zu nehmen und bei Raumtemperatur stehenzulassen.&nbsp;<\/p>\n\n\n\n<h2
