Hot Summer Days
After we had a long winter this year and the spring did not really want to show, now comes the right summer. I did not really believe that we will get a nice summer this year. Fortunately, I have deceived myself about this and we can enjoy the summer days outside. And how can the summer be best enjoyed? Exactly, with a delicious ice cream or a refreshing salad. This fruit salad is perfect for hot days. I am happy when I do not have to cook and produce additional heat. Whom is it the same?
Your favorite fruit
For the fruit salad I used the fruits which have just season. Among other things: cherries, berries, grapes, melon, nectarines. Just take your fruit what tastes good to you, then the whole thing tastes a lot better. Doesn’t it?

For this I used unsweetened soy yoghurt. You can use your favorite yoghurt here. Personally, I prefer the yoghurt which is not sweetened. Usually this is too sweet for me and so you can taste it even with your own taste with fruits, homemade jam, etc. For dressing I used elderberry syrup and mint. Not the normal “pepper” mint, but the Mojito Mint, which is used for the same named cocktail or Hugo. This gives a so delicious refreshing taste. You can also add the mint in the sparkling water, with a few slices of lemon. You get such a super refreshing, tingling drink. Add ice cubes to the drink. Whoever wants something for the eye, enters into the ice cube form e.g. Raspberries, and fill this with water full and am into the freezer. You get decorative colorful ice cubes.
Full of vitamins and nutrients
And with this fruit salad you get a vitamin bomb. The fruits also have other nutrients. Here is a little insight:
Raspberries: Vitamin A, E, C, B, folic acid, calcium, potassium, iron, zinc, iodine
Cherries: vitamin A, E, C, B, potassium, iron, zinc, iodine, folic acid
Nectarines: vitamin A, E, C, B, potassium, iron, zinc
Honey Melon: Vitamin A, E, C, B, Potassium, Calcium, Iron, Zinc, Iodine
- 300 g fruit of your choice
- Cut the fruit into small pieces and put the whole into a bowl
- For the dressing you mix the yoghurt, the very finely chopped mint as well as the elderberry syrup. You can use more or less syrup here. Stir and add the Dressing over the fruits.
